HOP NATION STOUT HOP CITIZENS ABOUT HOP NATION X WILDFLOWER - US DRY IRISH STOUT
Paying homage to the the world's most famous Dry Irish Stout, and the evolution of that style through history, Us was conceptualised to represent a significant time in the history of it's production, while simultaneously showcasing the DNA of makes us (both Wildflower and Hop Nation), Us.
Although strewed in mystery, there is enough historical data to generate a sound picture of the evolution of Stout, and the sub category of Dry Irish Stout that led our interpretation of what would have been made between 1820 and 1950. During this time, it was a known practice to blend a portion of (likely acidic) aged beer into a stout, a practice known as vatting.
Wildflower, being a producer of complex, aged beer allowed us to utilise Topher's most recent blend of 'Amber' as our 'vatted' portion, then blended with the Dry Irish Stout we brewed together.
Us is a dark black beer, with deep mahogany highlights, a dense foamy head, intense roast and coffee aromatics, a smooth creaminess and a firm bitterness complimenting a dry residual sweetness.
Two breweries, with two stories, and a lot of passionate people that work and develop these unique stories - Us is our best effort to synergise our brands and share with you what is Us.

HOP NATION FESTIVAL WEST COAST IPA
Debuted at the GABS Festival in Melbourne, this is your classic Westy with the trio of Centennial CRYO, Simcoe CRYO & Ekuanot CRYO.
These all-American hops bring resin, pine & a fruit salad of your favorites respectively. Make room in your bum bag for this festival favourite.

Feeling like a Local Pinot ? here are few hand picked for your to try:

> Winstead Pinot Noir 2019 Lot 7 and Lot 16
Neil Snare has built a great reputation in the Tasmanian industry for Burgundian style, estate grown and produced Pinot Noir. Winstead is one of the warmer sites in southern Tasmania, which promotes early ripening and allows for extended skin contact during fermentation, producing Pinot Noirs driven by beautifully refined
tannin structure. Although grown on the same soil type, Lot 16 and Lot 7 show great contrast due to vine age, clonal material, altitude and prevailing winds. Fruit and wine production at Winstead follow organic and bio dynamic principles.
Lot 7 The palate is deep and rich, with sweet dark cherry, raspberry, plum and some spicy oak influences. The structure of this wine is immediately evident showing both weight and length. This wine is one for the cellar as it has been built for the long haulk. Venison or wallaby accompany this wine beautifully.
Lot 16 A soft, smooth entry with a velvety texture. The sweet fruit bounces across the palate, finishing with the fine grain tannins and aromatic oak. The black cherry and red fruit flavours are enhanced by a touch of sweet pencil shavings, derived from the new Francois Frere barrels used in conjunction with some older Saury oak. This wine shows elegance and grace. Match this with some char grilled quail for a real treat.

> Bremley Pinot Noir 2022 750ml
James and Vanessa Bresnehan’s farm is nestled in the northernmost reaches of the renowned Coal River Valley. A family run business, the vineyard now sits at 9 hectares in size with some vines over 20 years old. Hand picked parcels of fruit and paired back techniques bring site, soil and season from the vineyard into these 100% estate
grown wines. Formally known as Back Paddock, the fresh, contemporary branding is matched by a vibrant new winemaking direction headed by Anna Pooley and Justin Bubb.
"Mulberry and bright red cherries fill the nose, subtly detailed with toasty oak. A lively palate presents with fruits of the forest set around blackberry fruit at the core. Superbly ripe tannins roll through the palate combining with pleasing acidity to ground the highly lifted fruit expression. A captivating and imminently approachable Pinot Noir in its youth which also presents with the structure and balance for terrific results in the cellar over the medium to long term."

This Brinktop 2023 Killara Pinot Noir reflects its terroir, the selection of clones and the season. The cooler 2023 weather conditions make an elegant, slightly understated Pinot Noir while in the background the Pommard clone (51%) delivers the wine structure and power. The 115 (Dijon) clone floats sweet fruity characters from start to finish.
"A bright ruby red colour, aromas of red fruit - raspberry and red currant lead into a palate of darker red fruits. Black cherries, plums and Turkish delight. Black tea and black pepper spicy notes. Fine and well integrated tannins with some chalky texture."

> Laurel Bank Pinot Noir The Merton 2022 750ml
Laurel Bank’s well-established vineyard at Granton has earned a reputation for being one of Tasmania’s most consistent premium wine producers. Overlooking the Derwent River, the vineyard’s cool maritime microclimate is ideally suited to the grape varieties planted.
"Deep rich colour. Enticing notes of dark fruits and hint of chocolate on the nose, black cherry and plum dominate the palate. Barely perceptible fine tannins thread web-like throughout, giving balance. Long succulent finish with echoes of the black-fruited palate entry, fading with a wisp of Moroccan spice and white pepper."

The Yeti & Kokonut Metro Savagnin from SA; great smashable Savagnin Biodynamic made by Dave Geyer & Koen Janssens. Very approachable skinny wine with a charming stone fruits finish. The Frankie Cabernet Franc 2022 release from the Good Intentions Wine Co. Grab a good farmer blended with a musician; let them fermented for few months and Voilà! Lo fi Cabernet from Mt Gambier partially Carbonic Maceration for few days then 8 months in old oak. Naturally made with wow factor and big mineral back bone pallet. All available this week in store
