This 1996 had superb balance and epic length.

Trying can take you to many places near and far.
Often meeting new people and sharing stories about life and fascinating wines.
This Wynn’s Black Label 1985 Cabernet Sauvignon was one of those special wines.
It had barely moved an inch from this cellar it’s whole life.
One word, EPIC!

Cork vs screw cap…
You have a choice, pick one from this cellar containing either a cork or screw cap.
This quirky cellar is located under a house in Everton.
Can you believe the previous owners sold the house with about 300 bottles of wine left in it.
Upon hearing this I had to check it out.
The temperature seemed relatively ok.
Although looking at the wines with cork many looked in rough condition.
Wines ranging from Nyora 2003 Shiraz (Syrah) and Tollana Moomba 1980 Claret.
Sad to say the Tollana Moomba Claret was about 40 years past it’s best.
It had to be tried though, right?!

There are many options to consider when organising a cellar.
For instance you could arrange the wine by grape variety, would you start with red or white wine first.
Next could be producer followed by vintage.
Maybe you like the unorthodox approach of having wines spread all over the cellar in no particular order.

Is German Riesling better from a half (375ml) or magnum bottle?
Well this magnum of Joh. Jos. Prüm Wehlener Sonnenuhr Auslese 2011 was enjoyed over 48 hours.
On the second day it was much more open and developed.
A truly exceptional drinking extremely well!

I know what you’re thinking… this is a ridiculous question.
Of course everyone will say Grand Cru.
Maybe or maybe not.
Premier Cru is still relatively affordable whereas most of the Grand Cru’s are at stratospheric prices.

BOTTLED 18-02-1939.
“This is a cool climate ,vintaged in the vicinity of Lake Wendouree, Ballarat.
A blend of German, Irish and English varieties.
It has been released in honour of Alan in recognition of his role in the consumption of this particular product, and of Australian wines in general.
The Alan is a fresh old wine with prune/ground coffee/marmalade aromas with a touch of Chlorine.
The palate is sinewy and dry with dark chocolate/burnt toast/earthy flavours and strong tannins.
It finishes long and the fruit follows through with great persistence.
Although past it’s peak, the Alan is a fine old wine still showing ample freshness and balance.
It has aged well and should continue to hold for some years.
Best drunk with old friends.”wines was not responsible for creating this bottle of wine.
Nor do we condone counterfeit wine.
This label is so bad we had to share it with you!

Oysters and Chardonnay?
The festive season is in full swing.
It’s hard to top freshly shucked oysters with homemade vinaigrette and Bass Phillip Estate 2018 Chardonnay.
A glorious pairing, needless to say both didn’t last long!

Are you a fan of New Zealand Pinot Noir?
Enter Bell Hill 2016 Pinot Noir.
Established in 1997 by Marcel Giesen and Sherwyn Veldhuizen.
Located within a lime quarry in the Weka Pass, North Canterbury, the vineyard is modelled on high density plantings of vineyards in Burgundy, France.
A bit over 6000 bottles of this tremendous Pinot Noir were produced.
If you’re able to find any I’d be grabbing it with both hands!

This is it for me, using a trusty old waiters friend to pull the cork on this stratospheric Rockford Basket Press 1991 Shiraz.
“Black Shiraz is the sort of stuff I was
weaned on.
Uniquely Australian, it's loaded with rich ripe fruit flavour and very fine tannin - it's a big old fashioned red that will put a smile on the
faces of all those who drink it - but the
biggest smiles will belong to those who are patient enough to put it away in the cellar for 10 years.”
Insert a cheeky Mr. Simply side note…
It’ll even reward those who dare to age it for up to 30 years!
A truly unbelievable wine in tip top condition, I was left speechless at how good it was!

Are oysters and one of the best food and pairings on earth?
A spectacular combo in my opinion.Brochet is situated in the Villers-aux-Noeuds village south of the city of Reims.
The oldest vines date back to 1962.
Converted to organic winemaking practices in 2008.
Pair this with freshly shucked oysters at Bistro Jordy aka house and it’s heaven!
Enter Le Mont Benoit Extra Brut Champagne.
Based on the 2015 vintage it includes 20% of reserve wines, this is a blend of 35% Pinot Meunier, 35% Pinot Noir and 30% Chardonnay.
On the palate it has a fine bead with harmonious balance.
A brilliant Champagne!

Is this 2003 Second Growth Bordeaux too young to drink now?
If it is when would you enjoy it?
Léoville Barton's 116 acres (47 ha) of vineyards are located in the central part of the appellation along the Gironde river.
Located on the famed left bank!
The soil composition is mostly gravel with a subsoil of clay.
The plantings are 72% Cabernet Sauvignon, 20% Merlot, and 8% Cabernet Franc with the vines averaging 30 years of age.
After a few hours in the decanter this wonderful was singing.
It has plenty of time left!

Name a you’d love to try from the 80’s?
Enter Robert Mondavi 1989 Reserve Cabernet Sauvignon.
Cork and fill level were perfect.
I suspect this wine had been well cared for.
It’s a blend of 91% Cabernet Sauvignon and 9% Merlot.
A truly remarkable wine at the top of it’s game.
Deep red in colour with aromas of lightly toasted oak and blackberries.
On the palate it was soft with generous fruit flavours and epic length.
This wine left me absolutely gobsmacked!
Bravo !

Name a Barolo you’re loving at the moment?
Enter La Spinona Barolo Sori Gepin 2010.
The history of the winery dates back to 1920 when Giovanni purchased his first vineyard.
“La Spinona, a name associated with the terroir, originates from an important family member: the ever-present memory of their Spinone Italiano-breed dog called Baica.
A friend who accompanied Pietro on his journey over the years, saving the life of his son Gualtiero when he fell into the Tanaro river during a hunting trip.
To show his gratitude, Pietro decided to pay tribute to Baica by placing her as the winery logo.”
Now I know why our dog Twiggy loves this as well!
Deep ruby in colour with luscious raspberry aromas.
Soft and elegant on the palate with great balance and tremendous length.
The 2010 was on fire!
