Dom Pérignon is the most famous Champagne in the world, and for good reason. The bouquet sparkles with delicate fresh violets in a setting of white peaches. The soft delicate flavours continue while the senses are tickled by the most delicate of fine bubbles. Though this is such a fine delicate wine, the complexity is astounding, along with its length. Stunning.
Trappistes Rochefort 10
Wow. Dark fruit and a little spice.What a delicious beer. Dark mahogany brown, large tan head, with a TON of dark yeast at the bottom. The smell is dripping with molasses, honey, peaches, plums, and other dark fruit. Sort of a lightness to it, especially for 11%, both on the tongue and in the nose. Sticky and sweet all the way through, all the way to the end where there's an astringent finish.
Chimay ‘Blue’ pours a super cloudy brown colour with some centered bubbles and one finger of foam. The aroma is clove, banana, coriander and a bit of brown bread.
The flavour of cloves, toffee and molasses dominate the beginning of the beer while its bubbly middle highlights notes of malted licorice and fruity plums. It finishes with chocolate and a sneaky throat warming spicy coriander blast that leaves you with a warm sensation in your stomach when it settles.
It is a very enjoyable complex beer that will mellow nicely enough to showcase the unique flavours without them overpowering one another.
