Looking for an easy and affordable fruit cake to make for the family this Christmas? Then this three ingredient fruit cake is for you. 🍊🍰

Three Ingredient Fruit Cake
Prep Time: 45 Minutes
Cook Time: 2.5 Hours
Serves: 8-10

Ingredients:
🍊 1kg Black & Gold Dried Mixed Fruit
🍊 3 cups orange juice
🍊 3 cups self raising flour

Method:
1. Soak the mixed dried fruit overnight in the juice. This releases the natural sweetness and prevents the need to add additional sugar.
2. The next morning, preheat oven 125C.
3. Line a 22cm cake tin with baking paper.
4. Stir self raising flour through the mixture.
5. Spoon the mixture into the cake tin.
6. Bake for 2.5 hours or until a skewer removes clean.

Christmas is the perfect time for ham.🎄🍖
So why not elevate your award winning IGA ham even further with this easy and delicious mulled wine ham glaze. 😃

Mulled Wine Ham
Prep time: 25 mins
Cook Time: 1-1.5hrs (depending on the size of your ham)

Ingredients:
🍖 IGA Australian Whole or Half Leg Ham
🍖 250ml full bodied red wine (non-alcoholic wine, if preferred)
🍖 100ml orange juice
🍖 180g orange marmalade
🍖 1 cup golden syrup
🍖 6 cloves
🍖 1 cinnamon stick
🍖 2 star anise
🍖 2 bay leaves

Method:
1. In a large saucepan over medium heat, place all the ingredients and bring to a boil then reduce to a simmer stirring occasionally. Cook for 20-25 minutes until liquid has reduced and it reaches a syrupy consistency.
2. Preheat the oven to 160°C.
3. Carefully remove rind from ham with a sharp knife then score the fat in either a diamond or diagonal pattern.
4. Spread the glaze over the ham, place on a deep baking tray and bake in the oven for 1- 1.5 hours depending on the size of your ham, basting every half hour with more glaze.

So ….I’m filming in Dandenong today and it turns out I’m literally across the road from the Woolworths Workers picket line. At the end of my shoot I walked over to say hi and met a few of the wonderful workers then 2 minutes later around the corner this IGA truck drives past ….. anyway just thought I would share the pics….. oh and if you are interested that IGA truck is most likely full of stock heading to IGA stores which have shelves filled with everything you may need if your local Woolworths shelves are empty….. and yes this did all actually just happen by coincidence. .. which makes it even funnier ….. but all still true.

Looking for a quick and easy dessert for the festive season? Then check this traditional white Christmas slice with a tropical twist.🎄🌴

White Christmas Wreath
Prep time: 30mins
Serves: 8

Ingredients:
🥥 580g white chocolate
🥥 2 cup rice crispies
🥥 50g Community Co dried cranberries
🥥 200g Community Co dried mango, chopped
🥥 80g (1 cup) shredded coconut
🥥 100g Community Co slivered almonds
🥥 Community Co glace red cherries to decorate

Method:
1. Grease and line with cling film a round bundt tin. Set aside.
2. Melt the chocolate in the microwave in 30 second increments, stirring until smooth and melted.
3. Add the rice crispies, cranberries, mango, shredded coconut and almonds to the chocolate. Stir to combine.
4. Spoon into the prepared tin and press down. Place into the fridge for 1-2 hours or until set.
5. Decorate with glace cherries and rosemary.

It’s almost the season of giving! 🎁

Time to get organised and try this super easy Brandy Butter recipe. An oldie but a goodie and the perfect gift for the Fruit Mince Pie lover this Christmas.

Prep time: 15mins

Ingredients:
🧈 250g Black & Gold unsalted butter, softened
🧈 a pinch of salt
🧈 100g icing sugar
🧈 1tsp vanilla paste
🧈 1/4 cup brandy or brandy essence*

Method:
1. In a large bowl, add the butter, salt and whisk until light and fluffy.
2. Continue whisking and add the vanilla, then icing sugar a little at a time.
3. When the sugar is incorporated, add the brandy a tablespoon at a time and keep whisking until butter is pale yellow.
4. Scrape the butter into your desired container and refrigerate for at least an hour before serving.

Note: This should last 2-3 weeks in the fridge or up to 3 months in the freezer ❄️
*Brandy for over 18yrs only. Serve responsibly.
