Specific Techniques: Vin de Voile

Vin de voile (veil wine) is a type of white wine made using a very specific technique. After alcoholic fermentation, a natural layer of yeast, known as the "veil," is allowed to develop on the surface of the wine as it ages in barrels exposed to air. This process lasts between five and ten years, with no intervention.
The veil protects the wine from turning into vinegar and imparts unique organoleptic qualities.

These wines are characterized by pronounced aromas of walnut, hazelnut, and occasionally a hint of methylated spirits.

Wine as we know it today began to take shape in the Middle Ages.
During this period, wine was a vital necessity because water, often polluted, was dangerous and sometimes deadly. Its consumption was widespread among men, women, and even children, with an average intake of 3 liters per person per day. Those less fortunate turned to beer, cider, or perry as alternatives.

Although medieval wine was less alcoholic than modern wine (7-8%), such high consumption led to numerous chronic illnesses, including alcoholism, gout, and degenerative conditions. Interestingly, absinthe wine was considered a remedy to help people overcome their addiction to wine.

Recognition tasting: You taste a wine and identify it, sharing a few anecdotes about its characteristics. It's an impressive skill, but one reserved for professionals highly trained in this practice.

Grape Varieties: Sémillon

Sémillon is one of the great white grape varieties of Bordeaux and the South-West of France, alongside sauvignon. It is also cultivated in Australia, California, and South Africa.

Sémillon is primarily a blending grape and is highly productive. Its most notable characteristic is its exceptional receptiveness to noble rot (Botrytis cinerea), which allows it to produce luscious sweet white wines.
This grape adds richness, roundness, and a velvety texture to wines, along with complex aromas such as honey, toasted dried fruits, fresh butter, acacia flowers, figs, candied citrus, green apple, and fresh walnuts.
Sémillon ages well and shines particularly in certain crus of Pessac-Léognan. It is the quintessential grape variety of Sauternes, where it reveals its finest qualities.

Grape variety: Pinot Noir
In 2004, the domaine nearly tripled its vineyard area by taking full control of the exclusive 9-hectare monopole of Nuits-Saint-Georges 1er Cru Clos de la Maréchale. This vineyard had previously been cultivated and marketed by Maison Faiveley.
Frédéric Mugnier is a thoughtful and passionate winemaker, and his cuvée Les Amoureuses reflects his personality: delicate and magnificently refined. While the structure may feel slightly abrupt in its youth, it matures quickly, reaching its peak after eight years of aging, transforming into a masterpiece of charm.
The finish is tender, tangy, and floral—truly the signature of this exceptional wine. Savor this remarkable experience by pairing vintages such as 2000, 2004, 2006, 2009, 2010, or 2015 with white meat dishes like poultry, veal, or sweetbreads.

AOC: Roussette de Savoie
The Roussette-de-Savoie appellation, or simply "Roussette," refers to a dry white wine typical of the region, made from a single grape variety: Altesse. Roussette is produced in Frangy, near the shores of Lake Bourget.

These wines are known for their great finesse. While they can be enjoyed young, they improve significantly after a few years of aging. Over time, they develop remarkable elegance, a good length on the palate, a pale hue with green highlights, and aromas of stone fruits, exotic fruits, or wildflowers.

If you're visiting the Lake Bourget area, stop by Guy Justin, who is based in a small village near Jongieux, to the west of the lake. He cultivates about ten hectares of vines. With a preference for Roussette (which accounts for 70% of his vineyard's plantings), he crafts the best from this variety, producing his signature cru Marestel. Although still relatively underappreciated, this wine has no notable flaws.

Vintages by Appellation: Margaux

Margaux wines stand out for their delicacy, highlighted by fruity aromas of delightful finesse. They are the epitome of generous, smooth, and tannic bottles. Their uniqueness lies in numerous factors.
Unlike Saint-Julien, Pauillac, and Saint-Estèphe, Margaux winemakers have placed less emphasis on cabernet sauvignon. While still a minority, merlot holds increased importance here.

Furthermore, the appellation spans the territories of five communes: Margaux, Cantenac, Soussans, Labarde, and Arsac. In each of these, only plots with the best winegrowing potential are included in the AOC.

You can enjoy vintages such as 1986, 1996, 1999, 2000, 2005, 2009, and 2010—now at their peak—paired with chateaubriand, duck, partridge, or entrecôte à la bordelaise.

On nearly 30,000 hectares of varied landscapes and soils, Provence enjoys a particularly favorable climate for vineyards.
The Phocaeans, who arrived in Marseille in 600 BCE, followed by the Romans, monks, and nobles, advanced and refined wine production to the present day, even overcoming the devastating phylloxera crisis.

The grape varieties include: cinsault, mourvèdre, grenache, carignan, cabernet sauvignon, and syrah (for red and rosé wines), as well as ugni blanc, sauvignon, bourboulenc, Vermentino (known locally as Rolle), sémillon, and clairette (for white wines).

The region is home to nine AOC appellations, including Côtes-de-Provence, Bellet, Cassis, Palette, and Coteaux-d’Aix-en-Provence, producing mainly red, rosé, and white wines.
The reds are powerful and full-bodied, the rosés fresh, lively, and flavorful, and the whites straightforward and well-balanced.
