Little birdie told us about this Chardonnay, and we're bloody glad we wet our beaks. While this Chardonnay comes from young vines, the winemaking is all mature elegance. Natty, vinified with native yeasts, this is authentic Jura Chardy, spending 12 mo in French Oak. Slightly oxidative, spiced fruit on the palate. Liquid gold.

Bombastic, fantastic, fresh. This is versatile, crowd-pleasing red. Opulent red and purple fruit, dried thyme, some lovely, lingering complexity. There's depth here, but a pleasing, alert pop on the palate. Shiraz/Cab Sav/Nebbiolo: 50/30/20. All hand-harvested, extended post ferment maceration on the Nebb portion brings some lovely, tickly tannin. Smashing stuff.

Between wines, we occasionally like to reach for something a little different. Namely, this cult-status Vermouth coming out of Melbourne. Saison was created by Dave Verheul to serve alongside food at Embla, his inner-city wine bar. It quickly evolved into a project of its own. Brimming with organic, locally farmed produce and pure, ingredient-led flavours.

These botanical beverages change with the season. In autumn, pineapple quince is infused with saffron, bay leaf and blood orange, and is left to age on charred quince. As winter turns to spring, we turn to rhubarb awash with magnolia, lilac and violet.

Bitter and balanced.

Not untrue, but not always true. At the very least, we think it’s important to know what the qualities in wine are that you enjoy, and whether those qualities are magnified with some time in the cellar – before you go squirreling away your choice nuts.

Idée Fixe has been created by Vasse Felix as a separate house devoted to the production of Blanc de Blancs. Primarily Chardonnay with a splash of Pinot Noir for that dainty pink hue and those red fruit hits, this Méthode Traditionelle Brut Rosé moves slightly away from the Idée Fixe origin story. Alive with Pink Lady apples and Kaffir lime, pomegranate, raspberry, roasted almonds and pink peppercorns for your drinking pleasure. Soils in Chavignol promise a steely, mineral rich edge to François Cotat's Sauvignon Blanc. This is a Sancerre that drinks with racy exuberance while young, but will yield creme brulee indulgence if afforded a few years. There's full orchard flavour here, a hint of honeysuckle sweetness, zest and some pear.
