Turning the classic Tarte Tatin up a notch with BAYAB: sweet caramelised apples meet a cheeky splash of gin for a dessert that's equal parts fancy and fun.
Warning: may cause swooning (and seconds).
🌟Ingredients🌟
Serves 8
- 170g castor sugar
- 125ml BAYAB Classic Dry Gin
- 1 tsp vanilla essence
- 2 star anise or 4 juniper berries
- 4 granny smith apples (peeled, cored, and quartered)
- 50g salted butter, cubed
- 1 puff pastry sheet, thawed
- vanilla ice-cream and ground cinnamon, to serve
🌟Method🌟
1. Preheat oven to 180°C.
2. Place sugar, gin, vanilla pod and seeds, and juniper in a 22cm ovenproof frying pan over medium heat, stirring to dissolve sugar. Cook for 3-4 minutes or until light golden, then add apples, core-side facing up, and cook for 1-2 minutes or until light golden. Add butter and remove from heat.
3. Cut the puff pastry sheet in half and place the halves on top of each other. Use a rolling pin to lightly press the halves together. Lay the pastry over apples and, using a wooden spoon, carefully tuck in edges. Bake for 30 minutes or until pastry is golden and crisp.
4. Invert onto a serving plate while still hot and serve with ice-cream and ground cinnamon. Enjoy!

Refreshing, really easy to make, and charged with fresh peach purée, our Peach Paradise cocktail is set to be on rotation all summer long!
We opted for the one-and-only handcrafted, premium Granny's Bear vodka, but you can throw your favourite in instead. Just make sure it's the good stuff, would ya?
🌟Ingredients🌟
Serves 1
1 large ripe peach
1 cup of ice
60ml Granny’s Bear Vodka
30ml Monin Peach Purée
1 200ml Schweppes Lemonade
Garnish with a peach slice
🌟Method🌟
1. Cut half of the peach into smaller pieces and add to a tall glass.
2. Using a muddler, crush the peach pieces.
3. Chuck in the ice, followed by Granny’s Bear Vodka and Monin Peach Purée.
4. Top with Schweppes Lemonade and stir, garnish with a slice of peach, and enjoy!

What's better than regular churros? 3-ingredient Churros with Choc Brandy Sauce!
You can use any brandy you fancy, but we went for Joker Brandy for its notes of ripe pair, apple, raisins, and vanilla––imagine that paired with the warm, cinnamon-y joy of chocolate and churros?! Is this... the best recipe ever?!
⭐️Ingredients⭐️
Serves eight churros
For the churro dough:
1 cup all-purpose flour
2 tbsp oil
1 cup water
1 tbsp sugar
For the choc brandy sauce:
1 cup chocolate, chopped
1/2 cup pouring cream
30ml Joker Brandy
For the cinnamon-sugar Coating:
2 tsp cinnamon
1/3 cup sugar
Method
1. In a mixing bowl, stir flour and sugar. Set aside.
2. Add the water and oil in a non-stick saucepan. Bring to medium-high heat until it reaches a high boil.
3. Once the water boils, remove from the heat, immediately pour the flour and stir energetically with a wooden spoon or rubber spatula to form a soft, elastic dough ball.
4. Lightly oil a work surface, place the dough ball on it. Roll into a cylinder and use a knife to cut the cylinder into eight pieces. Shape into churros.
5. Using a fork, press marks all over the surface of each log to mimic the churro shape.
6. Brush vegetable oil on the air fryer basket. Place each churro inside––make sure they don't touch each other. Brush some vegetable on to each churro.
7. Air fry for 15 minutes at 200°C/400°F. flipping the churros halfway until they are light golden brown.
8. Meanwhile, in a small bowl, prepare the choc brandy sauce and cinnamon-sugar. Starting with the sauce, add chopped chocolate to a medium heatproof bowl. Place in the microwave for around 1min 30seconds.
9. Add the cream and stir until the chocolate has fully melted.
Add the brandy and mix until fully combined.
10. Then prepare the cinnamon-sugar by stirring the cinnamon and sugar evenly. Set aside.
11. Remove the warm churros from the air fryer and toss in cinnamon sugar to coat, dip in the chocolate and enjoy!

If you're looking for a fun dessert that's ready in three clicks of an app, you've found it. It's made with Malibu Lime (the best coconut liqueur since both sliced bread and desiccated coconut), but you can change it up. There is no limit to the flavours, colours, and toppings on this one.
⭐️Ingredients⭐️
Serve 24 bites
400ml milk
50g sugar
100ml Malibu Lime or liqueur of choice
50g cornstarch
½ cup shredded coconut, unsweetened
Pinch of salt (omit if using a different liqueur)
⭐️Method⭐️
1. Add 300ml of the milk into a non-stick pot and then add the sugar. Warm the milk-sugar mixture on a low heat, stirring until the sugar has dissolved. Note: do not let the milk simmer or boil.
2. Pour your liqueur into the remaining milk, add the cornstarch, and mix until fully combined.
3. Mix the cornstarch mixture while slowly pouring it into the pot. Add a pinch of salt and continue stirring until it becomes a thick consistency, around 4 minutes.
4. Line your container with parchment paper and pour in the mixture. Let it rest for around 1-2 hours or in the fridge until fully set.
5. Cut into bite-sized pieces and coat with shredded coconut. Enjoy!

⭐️Ingredients⭐️
Serves 2
1/4 cup sliced almonds
2 tbsp sugar
4 tsp instant coffee
1 cup boiling water
4 large scoops vanilla gelato
60ml Disaronno Amaretto, separated
4 amaretti cookies, crushed
⭐️Method⭐️
1. Add 1 cup boiling water to the instant coffee, stir and allow to reach room temperature.
2. Line a small baking sheet with parchment paper and set aside. Cook sliced almonds and sugar in a medium-size saucepan over medium-high, stirring constantly using a heatproof rubber spatula, until sugar melts, browns, and coats almonds. 5 to 6 minutes.
3. Scrape almond mixture onto prepared baking sheet, and quickly spread into an even layer. Let cool completely, about 15 minutes.
4. Break candied almonds into smaller shards and set aside until ready to use.
Divide gelato evenly among 2 small glasses.
5. Slowly pour half of the coffee and amaretto over the gelato in each glass.
Top evenly with crushed amaretti cookies and desired amount of candied almonds. Serve immediately and enjoy!

A crisp bubbly filled with fresh blueberry granita anyone? 🍾🍦
Miss Molly Rosé Blueberry Floats are the adultified version of the soda floats you drink for that nostalgic kid feeling. Charged with the world-class Miss Molly Petit Rosé MCC and fresh blueberries, this one is a crowd-pleaser of note.
🌟Ingredients🌟
For the cocktail
2 cup of homemade blueberry granita (recipe below)
4 scoops vanilla ice-cream
1 cup fresh blueberries
750ml bottle Miss Molly Petit Rosé MCC, chilled
Fresh mint leaves
For the Blueberry Granita
1/2 cup granulated sugar
2 tsp lemon zest
2 tablespoon lemon juice
1 cup water
1 cup fresh blueberries
½ cup Miss Molly Petit Rosé MCC
Method
For the Granita: In a medium saucepan bring sugar, lemon zest, lemon juice, water, and fresh blueberries to a boil over medium heat, stirring to dissolve sugar and lightly crushing the blueberries. Remove from heat; transfer to a shallow dish and allow to reach room temperature. Once cooled, add Miss Molly petit rosé MCC, and stir gently. Freeze for 4 hours or overnight.
Scoop gelato and granita into your serving glass.
Pour rosé over.
Garnish with mint and fresh blueberries. Serve immediately and enjoy!

1 large egg white
1/4 tsp salt
1/2 cup packed light brown sugar, divided
1 tbsp orange zest, divided
1/4 teaspoon ground cinnamon, divided
2 cups pecan halves
1/4 cup unsalted butter
1 tsp vanilla essence
1/4 cup Appel Jagters Dark Rum
2 large medium ripe bananas, halved lengthwise
2 1/2 scoops vanilla ice cream
🌟Method🌟
1. Preheat oven to 190. Line a rimmed baking sheet with parchment paper, lightly spray with cooking spray. Set aside.
2. Place egg white, salt, 1/4 cup brown sugar, 1 teaspoon orange zest, 1/4 teaspoon of the cinnamon in a medium bowl. Whisk to combine well.
3. Add pecan halves, stirring to evenly coat pecans in egg white mixture. Scoop pecans from bowl using a slotted spoon, allowing excess egg white mixture to drip off. Spread in an even layer on parchment-lined baking sheet.
4. Bake in preheated oven until pecans are lightly browned, 12 to 14 minutes, stirring halfway through baking time. Set aside, and let cool, about 20 minutes. (Pecans will not be completely crisp but will continue to crisp as they cool.)
5. While pecans cool, place butter, vanilla essence, remaining 1/4 cup brown sugar, and 2 teaspoons orange zest in a 10-inch cast-iron skillet over medium-high.
6. Whisk constantly until butter is melted and mixture is smooth. Cook, whisking constantly, until thickened slightly, 1 to 2 minutes.
7. Remove skillet from heat and add the rum, and whisk until alcohol evaporates, about 1 minu

15ml ounce lemon juice, freshly squeezed
Ginger ale, to top
Cucumber slice, mint sprig, lemon/orange wheel, and skewered strawberry (if in season) to garnish

Add Pimm’s No. 1 and lemon juice into a highball or whiskey glass (depending on how strong you prefer it) over ice, then top with ginger ale and stir briefly to combine.
