Recipe of the Day: Zesty Lemony Salmon Cream Cheese Baguettes

When life gives you lemons, make these zesty salmon baguettes! Fresh, light, and irresistibly tasty, they’re perfect for impressing your taste buds (or guests) in under 30 minutes.

Ingredients:

1 tub (250g) full-fat cream cheese

1 tub (200g) smoked salmon offcuts

Juice (60ml) and zest of 1 lemon

3 sprigs fresh dill

Butter for spreading

4 fresh baguettes

1 apple, thinly sliced

1 packet (80g) fresh watercress

1 pack (100g) PnP oak-smoked trout ribbons

How-To:

1. Blitz it! Blend the cream cheese, salmon offcuts, lemon juice, zest, and dill into a creamy spread of dreams.

2. Build it! Slice and butter the baguettes, then load them with the salmon spread, apple slices, and peppery watercress.

3. Finish with flair! Fold over trout ribbons for the perfect finishing touch.

4. Serve halved, whole, or wrapped in wax paper for that gourmet touch.

🎣 Hooked on Flavor? Try This Diabetes-Friendly Pilchard Pasta! 🍝

Looking for a healthy, delicious, and easy dinner? This recipe is perfect for anyone who loves bold flavors and cares about their health. Ready? Let’s dive in!

Ingredients:

500g whole wheat spaghetti

400g pilchards in tomato sauce

1 glug olive oil

4 garlic cloves, sliced

1 pinch dried chilli flakes

1 handful Calamata olives, pitted

30ml capers

1 handful flat-leaf or curly parsley, chopped

1 dash salt and milled pepper

1 squeeze lemon juice

Method:

1. Cook the spaghetti according to the packet instructions.

2. Drain the pilchards, reserving the tomato sauce, and break the fish into chunks.

3. Heat the olive oil in a pan and fry the garlic and chilli flakes until fragrant.

4. Add the reserved tomato sauce to the pan and heat through (add a splash of water if it’s too thick).

5. Stir in the pilchards, olives, and capers, and cook for 1-2 minutes.

6. Toss the cooked spaghetti with the sauce mixture and sprinkle with chopped parsley.

7. Season with salt and pepper, then finish with a refreshing squeeze of lemon juice.

Monday Motivation: Start Your Week with Flavor!

Turn your Monday dinner into a delicious triumph with this quick and easy Penne with Crispy Brinjals and Roasted Veg Sauce. It’s packed with veggies, flavor, and a whole lot of yum—all in just 30 minutes!

🕒 Ready in 30 minutes
👩‍🍳 Serves 2

Ingredients:

½ cup (125ml) olive oil

2 brinjals, cubed

Salt and milled pepper

½ packet (250g) PnP penne

1 bottle (425ml) PnP roasted vegetable pasta sauce

Handful of fresh basil

Grated PnP Grana Padano, for serving

Method:

1. Heat olive oil in a pan over medium heat.

2. Lightly salt the cubed brinjals and sauté for 10 minutes or until golden brown and crispy.

3. Remove brinjals from the pan and drain on paper towels. Set the pan aside for later.

4. Cook penne according to the packet instructions. Drain, reserving 1 cup (250ml) of the starchy cooking water.

5. Return the reserved cooking water, roasted vegetable pasta sauce, and crispy brinjals to the pan. Heat through.

6. Add the cooked penne to the pan and toss to coat everything evenly.

7. Serve immediately with a grating of black pepper, fresh basil leaves, and a generous sprinkle of Grana Padano.

Take time today to indulge in something sweet with your loved ones!

This Super Moist Chocolate Cake is perfect for a cozy Sunday treat. Get all your ingredients in store and make every moment special.

Super Moist Chocolate Cake with Perfect Chocolate Ganache

Cake Ingredients:

• 220 g all-purpose flour
• 400 g white sugar
• 90 g cocoa powder
• 1 ½ tsp baking powder
• 1 ½ tsp bicarbonate of soda
• ½ tsp salt
• 250 ml milk
• 125 ml oil
• 2 large eggs
• 1 tsp vanilla essence
• 1 stick Nescafé (2 g coffee)
• 250 ml very hot water

Ganache Ingredients:

• 200 g dark chocolate, finely chopped
• 200 ml heavy cream (or fresh cream)
• 2 tbsp unsalted butter

Instructions:

For the Cake:

1. Preheat Oven and Prepare Pans:

• Preheat your oven to 180°C.
• Grease and line two 23 cm (9-inch) round cake pans.

2. Prepare Dry Ingredients:

• Sift together the flour, sugar, cocoa powder, baking powder, bicarbonate of soda, and salt in a large bowl.

3. Mix Wet Ingredients:

• In another bowl, whisk the milk, oil, eggs, and vanilla essence until smooth.

4. Combine Wet and Dry Ingredients:

• Gradually mix the wet ingredients into the dry ingredients until combined.

5. Dissolve Coffee:

• Dissolve the Nescafé in hot water and add it to the batter. Mix until smooth.

6. Bake:

• Divide the batter between the pans and bake for 25-30 minutes, or until a toothpick comes out clean.
• Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

For the Ganache:

1. Heat Cream:

• In a small pot, heat the cream over medium heat until it starts to simmer. Do not boil.

2. Melt Chocolate:

• Place the chopped chocolate in a heatproof bowl.
• Pour the hot cream over the chocolate and let it sit for 1-2 minutes. Stir until smooth.

3. Add Butter:

• Stir in the butter until the ganache is glossy and fully mixed.

4. Cool and Use:

• Let the ganache cool until it thickens slightly.
• Use it to frost and fill the cooled cake layers.
• Allow the ganache to set before slicing.
