This is about to become your favourite quick and easy pasta recipe 🍝
All you need is:
🍅 Everest’s whole tomatoes, garlic cloves, Italian herbs, tomato paste, sugar, salt and pepper.
🍅 @funky_ouma olive oil.
🍅 Bel Canto tomato and mozzarella tortellini pasta (found in our frozen foods section).
🍅 @thegourmetgreek feta cheese.
Start by chopping the tomatoes into quarters and spreading them out evenly into a roasting pan. Add in 4 - 5 peeled whole garlic cloves. Sprinkle over some italian herbs and olive oil, shake to make sure that it’s spread evenly over all tomato pieces. Pop the tray in the oven to roast for 30 minutes on 180. After 30 minutes the tomatoes and garlic should be soft and full of flavour. Put the tomato mixture into a pot and add 2 - 3 tablespoons of tomato paste, 1 cup of boiling water, a teaspoon of sugar, salt and pepper (for a creamier sauce you can also add 2 - 3 spoons of @thegourmetgreek yoghurt). Let the sauce simmer for a few minutes until ready to serve.
While the sauce is simmering, pop the readymade tortellini pasta into a pot of boiling water and cook for 5 minutes, then drain and place into bowls. Pour the tomato sauce over the pasta and top with feta (and fresh herbs if you like!).
