An apt name both refers to the amazing atmosphere of Empress by Boon and the showcased flavor of Bitter Journey’s product Bing Zhou. Enjoy the nostalgic notes of northern China with an opportunity to reflect on the beauty of the moment in this amazing space.

“What use are flowers?”

So many different layers to this cocktail with so much meaning. On the surface it’s an earthy cocktail with herbaceous notes of bell pepper and celery that anyone who enjoys a good dirty martini would love. But a deeper dive ties the ingredients to its namesake.

“What Use are Flowers” was a seminal work by American playwrite Lorraine Hansberry first black woman to have a play on Broadway (also a closeted le***an).

Los Hermanos 1978 reposado tequila is made by a black and veteran owned tequila company from Baltimore.

Bitter Journey’s Amaro Bing Zhou is a tribute to China’s only ruling empress, Wu Zetian.

Plus Fino Sherry and Celery Root Liqueur garnished with an orange peel.

Star of Earth. The latest original cocktail by Martin Cate of Smuggler’s Cove.

This is another great cocktail with many different layers. On the nose, the nutmeg ms mint immediately draw stark contrast to the tropical and earthy body. The pineapple rum, lemon and passion fruit bring a lot of bright notes while the orgeat, falernum and Bing Zhou bring the earthy, nutty and herbal notes.

It’s a great drink that slowly changes as the night goes on. Order a second and it’s a completely different drink again.

Easter egg: anyone know what “Star of earth” means?

Pineapple rum, bing zhou rhubarb amaro, fresh lemon, passion fruit, orgeat, falernum. Garnished with fresh nutmeg and mint

Welcome Bing Zhou, our Northern Chinese Rhubarb Amaro, to the Bitter Journey Family. Named after Empress Regnant Wu Zetian (to only female ruler in over 4000 years of Chinese history). Bing Zhou is named after the province she was born in during the Tang Dynasty in the 7th century AD. It roughly translates to the United States. The calligraphy on the bottle is in the Fei Bai style commissioned by Wu Zetian herself.

The flavor profile is earthy woody, nutty, floral, smokey, with a rich dark fruit note. All flavors that embody Wu Zetian’s personality and personal philosophy. Another reason to respect the heritage of the women of Asia.

The ingredients are all sourced from the North China Plains and through the Hexi Corridor (modern day Gansu, Shaanxi, Shanxi, Hebei, Henan, Shandong, Jiangsu, and Anhui).
