As a Natura 2000 site, Lambay is a sanctuary for the largest breeding colony of North Atlantic Grey Seals on Ireland’s east coast. Present year-round, the seals thrive along Lambay’s intertidal shorelines and skerries, navigating every phase of their life cycle—breeding, foraging, resting, and beyond. From August to December, pups are born on remote beaches and sheltered caves, cared for in small, close-knit groups.
At Lambay Whiskey, we ensure our presence on the island is kept to a minimum, so it remains a thriving haven for seals, seabirds, and all who call it home.

🥃 How to make it:
Add 40ml Lambay Whiskey, 15ml Pedro Ximénez, 2 dashes of Chocolate Bitters, and 2 dashes of Plum Bitters into a mixing glass filled with ice.
