Cosmo Champagne Cocktail

1/2 cup orange-flavored liqueur such as Cointreau or Grand Marnier®, chilled
1/2 cup cranberry juice cocktail, chilled
1/3 cup Rose’s® West India sweetened lime juice, chilled
2 cups brut (dry) Champagne or sparkling wine, chilled

1. In cocktail shaker, add liqueur, juice cocktail and lime juice; cover and shake vigorously.

2. Divide liqueur mixture into 4 Champagne flutes; top with Champagne. Makes 4 cocktails.

Chef Tip(s):
Liqueur mixture can be prepared and refrigerated up to 3 days in advance.

Chocolate-Mint Martini

1/4 cup granulated sugar
Crushed ice
1/2 cup plus 1 tablespoon dark crème de cacao liqueur
1/4 cup plus 2 tablespoons vodka, preferably premium
1 1/2 tablespoons crème de menthe liqueur or peppermint liqueur
1/4 cup whipped topping
6 chocolate-covered creamy mint candies

1. Spread sugar on plate. Wet rims of 2 martini glasses with moist paper towel to dampen; dip rims of glasses into sugar to coat.

2. Fill cocktail shaker halfway with ice. Add crème de cacao, vodka and crème de menthe; cover and shake vigorously. Strain martini into prepared glasses; top with whipped topping and candies.

Kosher salt
Ice
3/4 cup silver tequila
1/4 cup orange-flavored liqueur such as Cointreau® or Triple Sec
1 cup canned lite coconut milk
1/2 cup coconut water
1/3 cup fresh lime juice
1/4 cup light agave nectar
4 fresh rosemary sprigs
1/4 cup fresh cranberries

1. Spread salt in shallow dish; wet rims of 4 rocks glasses with water and dip into salt to coat. Add ice to glasses.

2. In 2 batches, fill cocktail shaker halfway with ice; add 6 tablespoons tequila, 2 tablespoons liqueur, 1/2 cup coconut milk, 1/4 cup coconut water, 2 1/2 tablespoons lime juice and 2 tablespoons agave nectar to shaker. Cover shaker; shake vigorously.

3. Strain tequila mixture into prepared glasses; garnish with rosemary sprigs and cranberries.
