Black Sheep Tequila is the smoothest handcrafted 100% single estate Los Altos highland blue agave, using more agave per bottle, traditional methods and natural aerobic fermentation. Unlike other distillers, our Tequila is rested after it has been distilled in order to produce a purer, smoother, true agave flavored spirit. 100% Single Estate Blue Weber Agave, is produced and bottled in the town San Agustin located in the Los Altos Highlands of Jalisco, Mexico. These Los Altos Highlands are where the pulp attains a singular sweetness that combines honey, citrus, and agave floral notes.
Rested from anywhere from 1 to 15 years world-famous Tennessee American Oak barrels. The process begins by hand selecting Agave plants that take 8 to 10 years to mature.
The Los Altos Highland Agave is then slowly roasted for 72 hours in traditional masonry ovens and double distilled. Because of this process, a third distillation , which removes much of the pure agave flavor is not required. This results in a Tequila crafted from the finest Highland Agave and aged until it reaches the most extraordinary levels of flavor and character. It is made in an old and increasingly rare way with fully mature agave plants which are cooked slowly in traditional clay ovens and then slowly fermented and distilled with the agave fiber included, compared to modern distillers who buy agave half the size, pressure cook in a autoclave for a tenth the time, and ferment and distill only the agave juice. Our delicate method, known to produce excellent tequilas is more time costly, time consuming, and makes all the difference.
