The vineyards, situated in the southern reaches of Troyes achieve greater ripeness which leads to a richer fruit and classic baked biscuit flavours mixed with characteristic toasty yeast overtones. Only the first, lightest pressings are used, as is usual for fine Champagne. Classic slow second fermentation in bottle followed by maturing on the lees for at least 18 months before being disgorged and released for sale.

Rapel Valley is located on the 6th Region, 160 kms south to Santiago. This zone has good drainage, excellent fertility and great characteristics for agriculture, especially for red varieties like Cabernet Sauvignon, Carmenère and Merlot. This valley has a Mediterranean climate, it has coastal influence because it limits with the Cordillera de la Costa, which is low.

Bright ruby-red in colour with plum and red cherry aromas and subtle black pepper notes. The palate is juicy with ample fruit character. Supported by gently wooded influence giving good structure and rounded tannins. It has a soft palate and a fruity finish.

/ / A Trip to France - Domaine de la Motte Chablis Vieilles Vignes 2021
-
Low-yielding vines grow on north-facing kimmeridgian and chalky clay soils surrounding the village of Beine. From here Adrien selects parcels from vines approaching a minimum age of 50 years for his Chablis Vieilles Vignes. Harvesting is both by hand and machine 50/50. After a short cold maceration and gentle pneumatic pressing, the wine is racked and fermented in stainless steel for 15 days at 21ºC. Around 10% is fermented in large (600l) oak barrels for 15 days and remains in oak for 8-12 months – the rest in stainless steel. Malo follows the alcoholic fermentation in early January.
