Today’s pairing- Chateau de Calavon ‘Agathe’ rose’ is a true beauty. Showing more weight and body than many of the roses from Aix- en Provence, this is no wimpy, pinkies up rose’ rather it has a bit of structure on the side palate; a rose’ than can hold its own with spice really well. Singing of summer with ripe strawberry, cherry, citrus, mineral and a touch of salinity. Paired with a shrimp risotto with tomato, saffron, pimenton & shaved Manchego. Delicious and Cheers!

Today’s pairing- Font Sarade Plan de Dieu has been a store favorite for several vintages. The wine is a blend of Grenache and Mourvedre’ and has a lovely silken & velvet textured palate with dark black berry fruit, wild thyme, bay leaves, black olive and a touch of warm spices. It certainly surpasses its price and complements bistro foods from pate’, robust cheeses, herb roasted chicken, lamb loin chops and steaks beautifully.
Medium rare petit filets, rosemary roasted potatoes and Swiss chard gratin.

Today’s pairing- Chateau de Calavon ‘ Agathe’ rose’ is a lovely Provence sipper that sings summer time. Pretty salmon in color, fresh and fruity, with red berry, grapefruit, sour cherry, lemon curd and finishes with salinity and acidity. Paired with crab cakes, potato salad and baby greens. Today’s pairing- We’ve been expressing our enthusiasm for Menetou Salon for years- a neighboring town to Sancerre, often with wine makers and producers who have property in Sancerre as well without the price tag of Sancerre. Certainly, there are some really lousy Sancerres- if you see a Sancerre for $20 -run don’t walk, it’s not legit! ( Purchased juice from likely spots as Tourraine with a label thrown on it)
Look to neighboring villages for incredible value - Giennoise, Reuilly, Quincy & Menetou Salon- these regions in Eastern Loire along with Sancerre grow fantastic Sauvignon Blanc.
Domaine Pelle, (who also has a single vineyard property in Sancerre) the Morogue single vineyard in Menetou is explosively fresh, with bracing acidity, mineral driven and ultra linear. Perfect Sauvignon Blanc. Paired with a picnic of lobster salad, ratatouille, sea salt jammy eggs and just picked radishes. Delicious & Cheers!

Today’s pairing- We are really liking Bodegas Ostatu rose’. The winery is located in the heart of Rioja Alavesa and holds some of the oldest and highest elevation vineyards with organic farming. The rose’ is modern in style with great structure, balance and dimension. A client said to me, “it just feels right, it’s perfect.”
Very fresh with red berry fruit, citrus and minerality. Paired with harissa, smoked paprika, garlic, lemon & cumin marinated and grilled chicken thighs with pistachios, olives and tahini yogurt along side grilled romaine salad with lemon dressing. Delicious & Cheers!

Today’s pairing- From the slopes of the world’s most active stratovolcano 700 meters above sea level, the Torre Mora Nero Mascalese Rosado is a beauty. Notes of wild strawberry, raspberry, cherry, Mediterranean scrub, fennel, beach roses, salinity, and finishes with perfect acidity. Today’s pairing- I love the versatility of pairing Rose’ wines and food. There are so many styles from so many different regions. It’s exciting to introduce a rose’ to someone who is on the fence, combating bad memories of white Zinfandel or even more of a shudder….Mateus rose’. They come back and tell us how much they loved the wine and the food and wine together. Crisp, dry, roses’ are fabulous with summer fare, Thai food and curries. Fuller bodied dry roses’ are terrific with BBQ & grilling, rustic pate’, and charcuterie. Elegant, pricier rose’s really show off with lobster rolls and duck salads. Roses’ from areas with salt marshes and near the ocean love salty dishes like sushi, oysters and potato chips. Sailing on Cru, I served up roast beef tartines with horseradish mayo and arugula micro greens an ever so easy going Provence rose’… with or without food. Delicious & Cheers!

Today’s pairing- Pais is an ancient grape variety brought to Chile when the conquistadors settled in the Itata Valley in the 16th century.
Dry farmed and biodynamic ancient vineyard. This wine takes beautifully to a nice chill, is light in body, low in tannin, mineral driven and aromatic. This is a fun summer red! Paired with pepper jack and Cotija stuffed sweet potatoes with tomatillo salsa, cilantro pesto and black beans. A must try! Delicious & Cheers!

Today’s pairing- Rose’ in the Northeast was considered to be a summer wine, increasingly it’s being drunk all year round due to its great versatility for food pairing. Rose’ is a natural match for grilled or roasted vegetables, salmon, lobster rolls, light pasta dishes, shellfish, bbq, spicy food and Mediterranean dishes. Pink looks great on you! Paired here with grilled vegetables, basil and mozz on baguette with arugula salad. Delicious & Cheers!

Today’s pairing- Cataldi Ceresuolo d’ Montepulciano is an oh - so approachable Rosato that’s round and juicy and finishes with perfectly balanced acidity. Notes of cherry, wild strawberries, thyme and wild fennel pollen. Montepulciano, whether red or Rosato loves tomato pasta dishes, pizza, sausages and with its bright forward fruit is a great pairing for broccoli rabe. Here paired with rigatoni with a slow cooked tomato sauce with sweet and spicy fennel sausage with a treasure layer of soft, melted fresh mozzarella in the center. Delicious & Cheers!

Today’s pairing- Marinated and grilled pomegranate and sumac chicken thighs, Ezme salad, (a chopped veg salad originating in Eastern Turkey)and tahini screams for the vibrant, refreshing, and organic Chateau de Calavon Agathe rose’. The wine is ultra fresh and bright with notes of crunchy rhubarb, strawberry, pomelo and finishing with salinity. The estate dates back to the Middle Ages and the family owned winery are 5th generation wine makers. This recipe and wine will be a part of the June wine of the month. Delicious & Cheers!

Today’s pairing- Such a pretty wine! Torre Morra Scalunera Rosato is one of my favorites this season, bursting from the glass with strawberry, peach, citrus, sea breeze, and volcanic minerality. On the palate this Sicilian rose’ is fresh and bright, balanced with lovely structure. Its complexity and weight makes it ideal for both food and sun porch sipping. Paired with a tomato, mozzarella and crispy mortadella focaccia with mixed greens. Delicious & Cheers!

Today’s pairing- From Piedmont, Saracco Pinot Noir has pretty aromatics of raspberry and blackberry, forest floor, vanilla, and white pepper. Very soft on the palate, rounded, with a satin texture. Italian Pinot Noirs, also known as Pinot Nero are bargains in the expensive world of the tricky growing Pinot Noir. Paired with veal cutlets and spinach, tomato, and artichoke salad.

Today’s pairing- The Cannonau grape of Sardinia is associated with longevity, having the highest levels of polyphenols of any wine, antioxidants linked to heart health and protecting from cardiovascular disease. Janna e Mare Cannonau is soft on the palate with dusty raspberry fruit, black olive, and white pepper notes. Here paired with a messy and very yummy turkey meatball sub with basil and mozzarella. Today’s pairing- New to FWCO this season, the certified organic Pink Flamingo Tete’ de Cuvée Rose’ is bright, fresh, and crisp with notes of strawberry, minerals, and finishes with great salinity. Located in the Camargue ( South of France) along the Mediterranean Sea, known for pink sands, pink flamingos, white stallions, and great salt. Paired with Sunday brunch on Cru- griddled sour dough, melted Comte’, caramelized onions, asparagus, jammy eggs, and crispy roasted potatoes with onions and peppers. Absolutely fantastic. Today’s pairing- The long awaited Aurore Bachelet Bourgogne Blanc, Hautes Cotes de Beaune Rouge and Puligny Montrachet have arrived! Once again we are profoundly impressed with her gentle touch in wine making. The Bourgogne Blanc 2022 is an expressive, elegant, beautifully crafted Chardonnay. Dry with flint, fresh lemon, pears, apple, almond, and a touch of honey. Beautifully textured and lasting on the palate. ( Ben S, Jenny, Deb L., Chrissy this wine is surely for you!)
Paired with haddock, corn, potato & leek chowder- sublime.
