Last month we had a fantastic time at SHULA Deli during our POP UP HUMMUS & WINE NIGHT 🍷🥘
We've put together an evening of well-thought menu that combines a delicious variety of unique Hummus Bowls, and paired it with incredible Mediterranean from Abaya Winery and Vortman winery - יקב וורטמן
The glasses were full, the candles were lit, the Hummus was fresh & the people were smiling. We found it a great success!

nana winery is located in Mitzpe Ramon, in the upper section of the Zin River at an altitude of 800m.

The loess soil is rich in minerals, and the vine benefits from the range of extreme temperatures between day and night, which enables gradual and moderate ripening in desert conditions. The combination of these conditions endows the grapes with a delightful desert quality and character.

Eran Raz, known by his nickname, Nana, is a Viticulturist who has transformed Mitzpe Ramon into one of the most desirable areas for obtaining grapes. Nana’s dedication to matching the grape variety and growing method to the terroir and desert climate has contributed greatly to the maturation and success of the vineyard.

Vortman winery - יקב וורטמן Preserving the natural flora, the soil life, and the fungi that live in symbiotic connection with the vines. not plow or damage the soil texture.
Adding nutrients to the soil and improving water retention is done with compost that they produce from the grape pomace.
No irrigation due to the rainfall area of 600mm a year.

Borell is the perfect time to open Ashkar’s Sauvignon Blanc.
Its fruitenss and acidity are the perfect companion for the Dutch cheese and cold cuts.
I find the freshness of this with its complexity turning an apertifi or a borlle as the dutch call it, to a culinary experience.

Arrange some cheese and olives and cold cuts, light some candles, arrange some flowers, and you are ready for a perfect autumn weekend.

Should Red wine be served cold?
Light and fruity red wines should be served in a 12-14 c. the proletar, a very light fruity and easy going Carignan can be served at 10 c.
In some countries like spain israel and south of france we will recommended to add ice cube.
In Holland it is enough to chill it in the fridge before serving.

Fermentations in Vortman winery - יקב וורטמן take place for 10 to 20 days (medium duration) using wild yeast. The fermentations are carried out under the control and precise monitoring of the temperature and allow us to produce concentrated but soft tannins and strong color and all this without over-extraction. At the end of the fermentation, the wines immediately enter the barrels to begin the aging process. At this stage the malolactic fermentations take place. This is the first step in the aging process which continues to mature in barrels, on the fine sediments, for 8 to 16 months. Aging in barrels naturally deepens the wine and improves its structure. 🍷

UM TUT 2017 100% Carignan from 55 years old vines. Harvest in the middle of September 2017.
Planted on a terra rosa soil, very low-yield vineyard, 300 kg per dunam (0.1 hectar) 12.5% Alc, 800 bottles a year.sulfit 37 mg per liter

light purple color, earthy nose with hints of leather and ripe fruits and chalk.
High acidity and soft tannins, Mediterranean herbs, and earthy tastes.
Medium sharp body, long and dry finish.

Proletary 2020 100% Carignan from 40 years old vines. Manual harvest in mid-September 2020.
Planted on light chalky soil, 10.5% Alc, light wine that fit the hot summer days.
Easy-going wine to drink daily. 2000 bottles a year.

Shambour is a characteristic wine, so I open it when we have lamb kebab or lamb ribs on bbq, the earthiness goes well with the potatoes and the acidic with the fatty meat and tahini.

The Negev.
1990 first have been planted in the Highlands, 800 meters above sea level.
Soils: sandy, loess. poor in nutrients, tend to flood during heavy winter rainfalls.
Temperatures range from very hot during the day (15-400C in the summer) to cooler evenings and very cold nights. The vineyards are sometimes shrouded in mists during the morning hours.
The dryness and lack of humidity keep diseases to a minimum.

“Many years of conventional farming have taken their toll. Chemical fertilizers, as well as herbicides, violate the natural balance between plants and animals. The result is a disruption which creates damage. Resistant weeds take over and require ever more intensive use of herbicides, and the fabric of life in the soil is severely damaged. The earth loses its living organisms – organisms that interact with the vegetation and without which there can be no healthy growth.
I have seen this happen more than once in older vineyards. Also, during my years at work, I have seen many old vineyards that, when they reached the stage where they were weakened, were uprooted.
As a land worker, who is connected to the land and to its roots, the loss of deep-rooted vineyards saddens me each time anew, since I believe that the can be rejuvenated by environmentally-friendly farming. The key is in the soil, and all that we are asked for is to balance it. To restore the life and biodiversity it has lost.”

The Chenin Blanc 2019, by יקב ננה - Nana Estate Winery .
Hand-picked harvest early in the morning, from the end of July- the beginning of August.

Best served in a Temp 10-12 c

The process: whole cluster pressing, fermentation in stainless steel vats, and bottling.
This process ensure and give the fruit full and true expression.

This elegant and fresh is characterized by flavors of green apple and pear, some citrus, and a hint of lychee. Taste of tropical fruits and flower blossoms. Mineral. Medium finish.

At Ashkar Winery the wines are strictly produced according to the 'Old World' style of winemaking, with minimum intervention in the process of fermentation and improvement in wooden barrels until bottling. The tradition of winemaking has been passed within the Ashkar family from generation to generation until 1948 and was revived with the establishment of Ashkar winery in 2010.

Judean Hills.
The hills are part of the Eastern mountain range reaching elevations of over 1000m. were planted in the 1950’s and 1960s.
Summer day temp range from 18 to 30 and nights are cool. Winter temperatures are from 5 to 20 Celsius.
Due to the wind from the coast, the air is dry.
The soil is mainly limestone and dolomite but also clay and terra rossa. This combination of soil and weather promises to produce best from the vines.

The Shambour 2015, by Vortman winery - יקב וורטמן
Dry red wine. 45% Carignan ,36% Merlot ,19% Cabernet Sauvignon.

The grapes are hand-harvested from the Vortman vineyards in the Mount Carmel wine region in Israel. The grapes are crushed, then fermented for a period of 2 weeks in stainless steel vats. After finishing the fermentation the wine is aging 11 months in French and American oak barrels.

Dark ruby red, medium body with soft and pleasant tannins. Concentrated blue, black and red fruits, floral and earthy, a bit smokey and spicy. Dark chocolate flavored finish.

The Galilee.
At the north, the region most suited for viticulture due to its high elevation, cool breezes,
marked day and night temperature changes and rich, well-drained soils;

The upper Galilee (North) Hills of over 800m above sea level with deep and
narrow valleys.
Limestone forms the base soil followed by basalt and ground cover of terra rosa.
The summer days are hot and dry, nights are cool and during winter it is cold with some snow on hill tops.

Lower Galilee (North West) is similar to the Upper Galilee but more moderate climate.
Hills are up to 500m above sea level.
Limestone is a very common soil followed with some basalt and terra rosa.

At Abaya Winery, the carefully selected varieties of grapes have been well acclimatized to a relatively hot climate and thus allow them to make local . Wines that express the culture, the Israeli climate, and geography.

The Carignan, a variety that was underappreciated in Israel for many years but is now getting its due recognition, is used for four red wines from three old vineyards, Snonit, Shuni, and Um-Tut. These are Mediterranean wines, full of character.
