When Saison arrived in America, it was through the writings of acclaimed beer writer, Michael Jackson (not to be confused with the lesser known singer). At that time only one commercially available was in the whole world, the struggling Dupont brewery in Wallonia. One of the finest purveyors of saison in the Dupont style was a brewing operation in the Boston area, Pretty Things. Martha and Dann of Pretty Things are true journeyfolk for whom travelling isn't a holiday but a lesson in the art and science of brewing. When Pretty Things shut up operation in 2015, cries went up over New England as they took some well earned time to themselves. Several years of travel eventually saw them land in industrial Sheffield where they set themselves up as Saint Mars Of The Desert. Few could have predicted this as their home but their farmhouse on an industrial estate has become a stalwart of Sheffield beer. Eventually the calls of Jack D'or and some of the iconic beers from the Pretty Things days started appearing on brew schedules. Jack D'or isn't a fancy saison, its bitter, its estery, its spicy and it refuses to submit to one recipe.
