MEDLAR - the ancient fruit, evolutionary predecessor to the pear (sometimes referred to as dog butts) - a fruit that makes the orchard based cider maker either curious or question as to why anyone would waste their time to figure out how to ferment them.
The medlar is full of warming flavorful attributes (nutmeg, cinnamon, allspice, etc.) but have to go to full mush before the sugars and flavors develop. Imagine sticky apple butter that clings to large seeds under a thick leathery skin…
Every batch of medlar ferments crafted off of these old trees are done in a slightly different way, as we are headed on the journey toward capturing their delights.
Each vintage ages surprisingly well, leaving great opportunity to remember what changes in the final product when the methodology is adjusted.
The outcomes are consistently pear-like. Some years, more acidity and some with more weight and body.. but each encapsulating an essence of this ancient fruit. Buy them and compare them for yourself.
