The agave is baked in an earthen pit oven. This technique has been documented as being in use for over 15,000 years.

To create these ovens, a hole is dug in the ground, wood is placed at the bottom, and once it’s lit, stones are added.

When all the wood has burned down, leaving only glowing hot stones, maguey leaves are laid over them, followed by the agave hearts, stacked to form a tall pile that is then covered with soil.

The agave hearts remain in the earthen oven for one week.

QUIOTE: From the Nahuatl quiotl, meaning the edible stem of the maguey flower.

From here, thousands and thousands of seeds emerge. From a single quiote, you can get at least a thousand plants. A good quiote, just like that.

The best seeds are the black ones. We germinate them for 1 month, then transplant them to the nursery, and after 2 years, they are sent to the fields.

Cada gota de mezcal en Noble Coyote proviene de la alquimia de tierra y fuego. 🌋

El “Alcohol”, del árabe al-kuḥl, significa “espíritu sutil” y también es conocido como bebida espirituosa.
Desde tiempos remotos, este término evoca la práctica de la alquimia, donde se buscaban elixires sagrados; un proceso que, en nuestro mezcal, revela tónicos fragantes que concentran ancestralidad y artistría.


Each drop of mezcal in Noble Coyote comes from the alchemy of earth and fire.
“Alcohol,” from the Arabic al-kuḥl, meaning “subtle spirit,” is also known as a spirituous drink. Since ancient times, this term has evoked the practice of alchemy in search of sacred elixirs—a process that, in our mezcal, reveals fragrant tonics that concentrate ancestry and artistry.

Con este extracto de un poema sin nombre, honramos a María Sabina, la de los viajes terrenales, la de la sabiduría arbórea, la curandera mazateca, madre coyota, que se congració con “Los Niños Santos” —hongos psilocybes—, y con ellos descubrió, el poder de la regeneración física y espiritual.

Through this excerpt from an untitled poem, we pay tribute to María Sabina, the one who journeyed through earthly realms, the keeper of arboreal wisdom, the Mazatec healer, coyote mother, who formed a sacred alliance with the ‘Holy Children’ —psilocybin mushrooms—, and with them, unlocked the power of physical and spiritual renewal.

El quiote es el tallo floral que emerge del corazón del agave cuando la planta está lista para florecer, generalmente entre los 8 y 30 años de vida, dependiendo de la especie. Este tallo crece impetuosamente hasta alcanzar de 3 a 12 metros de altura, en cuestión de un par de meses. En este momento, el agave está enfocando toda su energía y nutrientes en la producción de flores y semillas para la reproducción, marcando el final de su ciclo de vida.

The quiote is the floral stem that emerges from the heart of the agave when the plant is ready to bloom, typically between 8 and 30 years of age, depending on the species. This stem grows rapidly, reaching 3 to 12 meters in height in just a couple of months. At this point, the agave is channeling all its energy and nutrients into producing flowers and seeds for reproduction, marking the end of its life cycle.

Nuestro Mezcal Jabalí es una creación rara y mística, un testimonio del arte de nuestro maestro mezcalero José Santiago. Nombrado en honor al jabalí salvaje, la naturaleza desafiante de este agave se caracteriza por la producción de espuma y un menor contenido de azúcar, lo cual exige tres o cuatro destilaciones y una maestría que pocos maestros como José, poseen.

Our Mezcal Jabalí is a rare and mystical creation, a testament to the artistry of our maestro mezcalero, José Santiago. Named in honor of the wild boar, the challenging nature of this agave is marked by its foamy production and lower sugar content, requiring three to four distillations and a mastery that only a few, like José, possess.

En la tradición Lakota y Tolteca, las fieras sagradas son quiénes resguardan la sabiduría. Cardinalmente se encuentran en el sur y les representa el color blanco.

En Noble Coyote honramos a todas las fieras sagradas, especialmente al Coyote que cada día nos congracia con su suerte. Una suerte insospechada que nos invita a confiar en la sabiduría de perderse para encontrar el lugar del corazón.

In Lakota and Toltec traditions, the sacred beasts are the guardians of wisdom. Cardinally, they are found in the south and are represented by the color white.

A diferencia del Espadín convencional de dos destilaciones, el Espadín Canábico potencia los matices del sabor del agave por sus tres destilaciones. La mezcla entre naranja y cannabis es una sinfonía aromática de la que emergen notas de tierra, guanábana y plátano, en el paladar se revelan matices de menta y la suavidad floral del jazmín; culminando con un retrogusto efervescente que deja una huella fresca y vibrante.

Aunque se incluye cannabis en la mezcla, sus componentes activos se pierden durante la destilación, ofreciendo únicamente el sabor de la planta sagrada , sin incurrir en sus efectos psicotrópicos.

Unlike the conventional two-distillation Espadín, the Cannabic Espadín enhances the agave’s flavor nuances through its three distillations. The blend of orange and cannabis creates an aromatic symphony from which notes of earth, soursop, and banana emerge. On the palate, hints of mint and the floral softness of jasmine are revealed, culminating in an effervescent aftertaste that leaves a fresh and vibrant impression.
Although cannabis is included in the blend, its active components are lost during distillation, offering only the flavor of the sacred plant without its psychotropic effects.

El agave Jabalí, considerado el más exótico y uno de los más exquisitos, prospera en la zona mezcalera de Oaxaca y, aunque se encuentra relativamente en abundancia, su proceso de elaboración es conocido por muy pocos maestros mezcaleros, debido a su desafiante naturaleza espumante y su menor contenido de azúcar —lo cual requiere de tres a cuatro destilaciones.

The Jabalí agave, considered the most exotic and one of the most exquisite, thrives in the mezcal-producing region of Oaxaca. Although it is relatively abundant, its production process is known by very few master mezcaleros due to its challenging foaming nature and lower sugar content—requiring three to four distillations.
