from Chicago releases their latest Autumnal Seasonal Gin created with guest distiller Abby Titcomb. Vetiver and White Poplar Buds give earth, wood, grass, resin, sap, and curious florality. Supported by Tangerine Peel, Sage, and classic gin botanicals.

For the Autumnal recipe they directly imported Vetiver Root (AKA Khus) and White Poplar Bud as the duo of central ingredients. Vetiver Root (Khus) gives wood, earth, grass, and a bit of smoke. Occasionally used in teas and as a spice in South Asia, its fragrance promotes grounding and calming while traditional medicines have employed its soothing, anti-inflammatory properties. The resinous, sappy, floral aroma of White Poplar Bud surprisingly carries an additional cute and curious little hint of bubble gum. Wild-harvested in Europe, these precious tree buds have been used in teas, syrups, and topicals for centuries in both cuisine and herbal remedy. Tangerine Peel and Sage play direct support while Juniper, Coriander, Cardamom, and Cubeb round out a classic gin foundation. The end result is a savory and welcoming spirit that works effortlessly in cocktails intended to warm the soul.

Bourgogne Aligoté is an Appellation d’Origine Contrôlée (AOC) white wine produced from the Aligoté grape variety in France’s Burgundy region. The wine tends to be light and acidic with notes of apples, lemons and herbals common.

This fresh wine pairs perfectly with grilled fish, seafood, cold meats and goat’s cheese.

Local Haitian rum forms the base of Zoranj Anmè, sweetened by cane juice reduced over fires fueled by the spent cane after it is pressed. The liqueur is infused with the peels of bitter, curaçao, and sour oranges, imparting unparalleled brightness with natural spice and bitterness. The bright, bitter, and spicy species of orange, Citrus aurantium, is believed to have been brought to the island of Haiti in 1492 and citrus has thrived there ever since.

Try in your Sidecar, White Lady, Rum Sour or any cocktail that calls for a citrus liqueur that need an added depth and complexity. 

In Creole anmè means bitter and zoranj means orange.

The Kilchoman whisky distillery was founded in 2005 at the Rochside Farm, not far from Machir Bay at Islay’s West Coast, and draws its water from a spring on Cnoc Dubh. The Scottish farm is entirely self-contained, barley is grown and malted at the distillery, and maturations and bottlings take place onsite. The resultant single malt Scotch whisky will not undergo chill-filtration nor will spirit caramel be added, the standard strength will be at 50% abv, reduced with Islay water. 80% of the spirit is matured in ex-bourbon casks, from Buffalo Trace distillery in Kentucky, the remaining spirit will be matured in Oloroso sherry butts.

Fino Sherry Cask Matured | A limited edition that spent its full maturation in fino casks previously used by Bodega Miguel Martin in Spain, 11 fresh butts and 1 refill butt. Fino is a drier, more saline type of sherry which gives the whisky layers of fragrant green apple, balancing with the citrus sweetness, cooked fruits and maritime peat smoke of the spirit.

Machir Bay | Their signature peated single malt, a vatting of Kilchoman matured in both bourbon and sherry casks. Named after Islay’s most spectacular beach, the high proportion of bourbon barrels create a distinct balance of classic Islay character and fresh floral complexity.
