A Pet Nat, short for the French 'pétillant naturel' meaning 'naturally sparkling,' is a sparkling wine made in the méthode ancestrale. This means the wine is bottled before primary fermentation is finished, without the addition of secondary yeasts or sugars. Developed in the 16th century, this is the oldest way of making sparkling wine, and is the result of a single, continuous fermentation.
