This 4R selection is something special being barreled nearly 11 years and bottled at a cool 111.6P to really allow your senses to absorb the intricate character.

From Four Roses, "OBSO is made by pairing our high-rye “B” mashbill with our fruit-forward “O” yeast strain. This combination gives OBSO its signature deep, rich fruit notes that balance perfectly with the bright rye spice. The rye provides robust structure, but the defining character of this recipe is the fruit that the O creates.

Some of the fruit flavors produced by the O strain are maraschino cherry, red apple, ripe cherry and light berry. At the younger ages, the flavors are bright and crisp. But as the recipe ages, increased caramel and vanilla tones mingle with mellowing fruit flavors to create deeper, darker fruit tones that sometimes give an almost-candied impression.

Wine (yes we did!) not give it a try? Domaine Gerard Fiou is a small, family-run estate in the eastern part of Sancerre. Fiou is one of just a handful of producers here, and the soils in this vicinity are super flinty (silex) and the vines are quite old (60+ years old). This combination of well-drained soils and old vines gives Fiou's wines an intense mineral expression, but also scarcity and lofty prices to match.

However, here is the good news, Fiou's 'Just Fiou' Sauvignon Blanc comes from vineyards just a couple of miles outside of Sancerre. Grown on similar flint and limestone soils, this Loire Valley Sauvignon Blanc explodes out of the glass with aromas and flavors of zesty citrus, green apple, pink grapefruit, and honeysuckle. 100 % Sauvignon Blanc. 10 to 40 years old vines. Delicious!
