January is the time we often reflect inward and make goals for the month or year to come. For some of us, that comes in the form of DRY JANUARY (Hey pals, we miss ya- did you know we have lots of N/A options in the shop?!).

For us at Off Premise it's turning our focus to drinking BETTER (which doesn't have to mean more expensive).

More and more winemakers, distillers and brands are producing wine and spirits with minimal intervention, no additives and coloring, and the highest quality fruit, grain and raw material. Farmers and producers are going beyond more than just 'organic', but integrating sustainable and regenerative farming and production practices along with establishing initiatives to protect workers across the industry. Many of us already set high expectations for the quality and sustainability of the foods we eat, doesn't it make sense to set these expectations for the wine and spirits we drink as well?

We have and continue to make the commitment to honor these values in the wine and spirits we choose to carry without sacrificing quality and taste. We appreciate that many of our customers are quite educated and already seek to 'Drink Better'. You can feel comfortable in knowing you can trust us to do the research for you.

Vin Des Potes was created by two passionate sommeliers, Basile and Yoan, who collaborate with various winemakers in different regions, who all share their philosophy of natural winemaking. Each cuvée is the result of “1 winemaker + 1 terroir + Basile + Yoan.” Their wines, regardless of who they collaborate with, are organically or biodynamically farmed, harvested by hand, fermented with only indigenous yeasts, made with nothing added or taken away in the cellar. Stefano Amerighi, the winemaker Vin Des Potes has collaborated with for ‘La Botte Secrete’ is the owner of a small yet mighty wine estate in Tuscany, focused on sustainability and regenerative farming.

The nose reveals an inviting bouquet of red fruits, particularly cherry and raspberry, intertwined with subtle herbal notes and a hint of earthiness while floral undertones further enhance its complexity. On the palate, it is medium-bodied with lively acidity that accentuates its freshness. Ripe red berry flavors take center stage, while nuances of spice and minerality emerge as the wine opens up. The tannins are soft and well-integrated, resulting in a smooth mouthfeel while the finish is clean and refreshing, leaving a lingering impression of fruit complemented by a touch of earthiness.

Toad Hollow is the collaboration of two old friends who retired, more or less, to an existence of peace and quiet in the Hollow, after a life of whirlwind world travel. Todd Williams, one of the founders, was the older brother of actor Robin Williams. Robin gave Todd the nickname "Toad" because he couldn't say "Todd" as a child. Toad Hollow is a charming locale in California, known for its vibrant orange-hued toads that inhabit the area. The community is surrounded by lush landscapes and features a variety of natural habitats that support wildlife. Visitors can explore the picturesque surroundings, enjoying the unique blend of ecology and color that defines Toad Hollow. Their mission is to produce quality wines that are delicious, interesting and accessible.

A field blend of 64% Chenin Blanc 14% Muscat 9% Grenache Gris 8% Pinot Grigio / Gris 5% Grenache Blanc. This wine is rich, vibrant, with aromas of acacia flowers, yellow plum, lime, yellow apple, and notes of wild flower tea. On the palate, flavors of tangerine, white peach, apricot, and pink grapefruit are driven by a mineral backbone into a dry finish.

A Galician winery run by a husband and wife team, Fento Wines are made with sustainably farmed grapes from micro vineyards in Ribeira Sacra, one of inland Galicia’s best-kept secrets. They work closely with several producers to address farming difficulties such as erosion, cover cropping, and sustainability. Grapes are grown on the dramatic slopes of the Ribeira Sacra where tiny plots of local grapes cling to the terrain. The fruit is hand-picked, fermented with native yeasts. Made from the native Godello, a unique grape growing in popularity and demand as the world becomes aware of its bright and mineral driven profile and ability to express terroir.

This Godello has bright aromas of lemongrass, almond, apricot and faint notes of herb. Flavors of peach skin, lemon verbena, quince and chamomile on the plate. This wine shows an incredible saline minerality that delivers a long lasting finish showing a balance of concentration and grace.

Burgundy Club

A popular Burgundy question we often get is What is the difference between wines from Pommard and Volnay. Pommard and Volnay are neighboring villages in the Côte de Beaune sub-region of Burgundy that are both known for their distinctive and prestigious red wines. Pommard wines are generally considered more powerful, often needing at least five years in the bottle before being ready to open, while Volnay wines are considered more elegant and finessed. Armand Heitz proves this true with this rich and serious Premier Cru site Pommard.

The 2019 Burgundy vintage is considered to be one of the most anticipated vintages since 2005 and this Premier Cru site in Pommard from producer Armand Heitz is no exception. The 2019 is the highest rated vintage for this Pommard across the board. An estate dating back to the 1800s, Armand focuses on biodiversity in the vineyards and meticulous viticulture and winemaking to produce wines of incredibly high quality.

A deep purple color this wine offers rich and fragrant aromas of lovely violet, ripe strawberry, pepper and dried leaves. The palate is muscular, offering weight while notes of red cherry and stony minerality balance and lift. Hinting at flavors of earth and meat, the wine shows plenty of intense red and dark berries while embracing a long and evolving finish. Can drink now or can wait 10-15 years.

Really interesting fact- 2020 was the first time since 1943 that new Premier Cru vineyard status has been bestowed in Burgundy and it allowed some of Pouilly-Fuissé’s most exceptional vineyards to achieve recognition as part of the greatest white wine appellation in Burgundy. La Frérie was among 22 vineyard sites nominated to Pouilly-Fuissé premier cru status in 2020 with its south-east facing vines of 65 years old, sitting at an altitude of 950 feet.


The Auvigue family have been farming the vineyard for generations. The wine is made from organically-farmed grapes grown in the premier cru vineyard of La Frerie entirely of the Auvigue estate. Crafted by Jean-Pierre and Michel Auvigue, third generation proprietors at their historic estate, facing the majestic Rock of Solutré in the heart of the Pouilly-Fuissé appellation.

Aromas of jasmine, violets, apple, hazelnut, honeysuckle and dried orange peel. On the palate is richly layered citrus and tropical fruit, honeyed notes. A touch of acidity brings brightness to the full, satiny, and enveloping body leading into a long, citrus and mineral finish.

...And It's 139.6 Proof!

Don't let the proof scare you, it drinks well under. However, Chicago is starting to dip into single digits and this is the perfect pairing.

Full disclosure, the video above is from a cave aging project that we look forward to purchasing and was used simply as an attention grabber.

A few months ago I headed down to Oaxaca with a few heavy hitters in the spirits industry: Owner of PM Spirits, Nicolas pallazi. Content creator extraordinaire, Lucas Assis (who I highly suggest following on Instagram ). Lastly, of course, brand owner of both 5 Sentidos and Alambuque Serrano, Jason Cox as our humble guide. Our 10 day journey was largly spent visiting Mezcal producers in the mountains and getting to know the producers over an abundance of home cooked meals and many, many, pours.

The last three days we spent 6 hours outside of Oaxaca City deep in the mountains--the main agriculture out there being sugar cane and other things. The barrel we picked is from an above ground (hot!) cellar just to the left of the aerial photo of the distillery on the front label. Another note, Lucas brought his drone on this trip for some extra content and this was one of the best shots among the many we enjoyed--expect a bunch more to be shared in these next few days.

Back to the barrel. We tasted A LOT! To our surprise these rums short-listed for the barrel selection drink well under proof. I was floored to learn that the barrel chosen sat at 69.8%.

Distilled by Rommel Krassel of Santa Maria Tlalixtac, Oaxaca the cane variety of Java was harvested at an altitude between 2,500-3,800 feet above sea level. After a fermentation in Pine vats with ambient yeasts the pure cane ferment was then distilled in Alembic Pot Stills before being aged for 28 months in virgin French Oak Casks. With a loss of 7% to the angels the final yield was 284 bottles.

With notes of toasted baking spices and fresh pastry this rum can be enjoyed neat but the incredible price to proof ratio allows one to use in any number of rum cocktails guilt free. This was my rum of choice for our Thanksgiving punch and has already been batched for our yearly family Eggnog share.

A note on the name, "Bolillo & Pão de Queijo:"

As many of you know I cooked professionally for well over a decade. It's a common occurrence that Mexicans, and not only in kitchens, have an affinity for nicknames and giving nicknames that follow you for life. Largely due to the transient employment of the culinary world, for better or for worse, I still hear my nickname to this day once in a while while out dining. Early in may career the nickname "Bolillo" was forced on me by the dishwasher. After a few days of hearing this word i had to inquire what it was, it was then that I learned from the dishwasher's cousin that a Bolillo is a big, fat, piece of white bread. As I moved around kitchens in the city so did the original staff, and with that nobody called me Adam ever again during this 10+ year portion of my life. Given that Lucas is Brazilian combined with the strong fresh pastry notes of the rum, it only made sense that Lucas shall now be known as "Pão de Queijo." or, Brazilian cheese bread.

Swing Through Tonight & Friday For Free Tastings!

I made a note in my calendar to remind myself NOT send a "Cyber Monday" email. I came to do this after spending the day unsubscribing from dozens in my own email box only then realizing that I'm most likely not alone in this.

So, I'll keep it tight and give you all a bunch of updates as we move into the holidays. First, We are closed on Thanksgiving day.

Second, we are open both tonight and Friday offering free wine tastings ALL DAY. Please swing by and see what our offerings are--we've stacked up and are ready for you.

Lastly, not only do we have our single barrel rum coming down the pipe, we also just landed our single run of NETA Mezcal Puchuga! I'll bother you later with a separate email when we get closer to the rum landing due to the complexity of acquiring this Oaxacan spirit as well as the amount of video content we have of the process. For the time being please consider reading a bit further as to why this particular Mezcal is very special to us as well as the style in general. Not interested? I'm not upset. What a treat! We've been waiting on this one for almost a year now. This is hands down one of the most interesting, expressive Pechuga Mezcals I have tried over my career. That being said, I am very fickle. When you have as much experience with Mezcal, particularly Mezcal Pechuga, as I have you start looking deeper down the rabbit hole for unfamiliar flavors. We all know the Pechuga de Mole, the bright citrus and the aromatic herbal Pechugas, but this Tamala squash Pechuga is different- VERY different.

This Pechuga is so unique that when the distillation was taking place the entire town came to investigate. Many of the women in the small village of Logoche, Miahuatian immediately recognized the aroma sweeping through the mountains! Two hens from the small ranch were hung up inside the still, and the unique Tamala squash was added to the distillate. The aromas wafted through the entire town, attracting much attention and most certainly made an impression on me upon tasting. In addition to the hens and the squash, some white corn was added as well as a local herb known as Pitiona. My first time having this herb alone I was immediately on the look out for it back in the states-- and of course my luck is that it is incredibly difficult to source stateside. The closest thing I can compare it to is Lemon Verbena, but, brighter-way brighter.

Bottled at a healthy percentage at 51.9% this is the agave product you need to impress your nerd friends. No friends? Use it as a bottle to break up your daily rotation.

Cartier 30 is an unaged rum produced in the town of Santa Maria Tlalixtac, Oaxaca. Along the steep slopes of this region, the Krassel family plants, harvests, and distills 100% organic java sugarcane from altitudes as high as 4,000 feet above sea level.
Distilled from fresh cane juice, the name refers to a specific level of alcohol measured on the Cartier scale, which eventually fell out of use in favor of the alcohol by volume. 30 on the Cartier scale translates roughly to 70% abv and was the preferred strength for many folks in the village, where historically it’d be mixed with a bit of fresh cane juice and shot.
This traditional aguardiente is fermented naturally and distilled in the Krassel family’s custom-built still, originally designed by Max Krassel who immigrated to Mexico from Germany in the 1930s. The still produces no heads or tails and the distillation ABV is regulated by the temperature of the cooling chambers and the flow of the fresh cane juice to
the boiling chamber.
Bottled at 70.3% abv with no sugar or water added. Funky, grassy, briney, and punchy, this is a rum for fans of unaged rums packed with flavor and character.

What a treat! We’ve been waiting on this one for almost a year now. This is hands down one of the most interesting, expressive Pechuga Mezcals I have tried over my career.
