Asahiyama Tenrai Junmai Daiginjyo, using Koshi Tanrei rice, which is the “child” of Yamada Nishiki and Gohyakumangoku, and a perfect example of terroir in sake brewing. With Niigata’s cool climate, Yamada Nishiki had to be imported from other prefectures. Niigata’s brewers wanted a local sakamai that would offer a similar flavor profile or even something richer. And although Gohyakumangoku is a Niigata sakamai, its small grains make it more likely to crack during the polishing process. Finally released in 2004, Koshi Tanrei has inherited all of its parents’ strongest features and none of the negatives. When the first Koshi Tanrei sake hit the market in 2007, made by local brewers, it won plenty of awards at the Zenkoku Shinshu Kanpyokai (National New Sake Championships).

It is a sake brewery that brews with water rich in minerals such as calcium that is assembled from 130 meters underground.

Not many people have tried Koshu(aged sake)before, and the over-whelming taste might not suit many. But do you know that you can drink Koshu in another new way, Sake-Highball, with a squeeze of lemon. Mikadomatsu
Ginjo sake is aged for 10 years in a mortar storehouse.
Made with koji from the rare sake-brewing rice, Hyogo-grown “Miyako,” which has been traditionally used since the Edo Period, and Okayama-grown “Asahi” for the kakemai rice.
As it is incredibly smooth for a vintage sake.
Kept cool within in the mortar storehouse, it is allowed to slowly and carefully age over the years.
Because of this, it has a beautiful taste and an aged-whiskey like aroma.
Although the quantity is limited, we offer this aged sake at a reasonable price so that those who are not as comfortable with aged sake are able to try it.
