It depends on whether it is Iberico or Serrano.
In an 8.5 kilo Serrano ham leg, between 50% and 55% is used. In Iberian hams, depending on whether it is Bellota or Cebo... but between 45 and 50 percent. The rest, the other 50%, is inedible skin, yellow fat, bones.
And in a palette? .
In this case, the use is less, it is usually between 35%-40%.

- The ham is longer than the shoulder
- The ham weighs more than the shoulder
- The ham needs more drying time than the shoulder. The ham needs 24 months and the shoulder 1 year.
- In the ham we find more nuances and the shoulder has a more intense flavor.
- We use 50% of a leg of ham and 40% of a shoulder.

If you give me a choice... I choose the ham.
I prefer a product that dries longer, since in turn we gain aromas and flavors. Also, the ham is used more in proportion. I'll stick with the ham.
