Do you know how much a leg of ham is used for? .
Depends.
It depends on whether it is Iberico or Serrano.
In an 8.5 kilo Serrano ham leg, between 50% and 55% is used. In Iberian hams, depending on whether it is Bellota or Cebo... but between 45 and 50 percent. The rest, the other 50%, is inedible skin, yellow fat, bones.
And in a palette? .
In this case, the use is less, it is usually between 35%-40%.

Difference between ham and shoulder.
They are similar but different. We can say that the ham would be our leg and the shoulder our arm.
- The ham is longer than the shoulder
- The ham weighs more than the shoulder
- The ham needs more drying time than the shoulder. The ham needs 24 months and the shoulder 1 year.
- In the ham we find more nuances and the shoulder has a more intense flavor.

It is not very normal but sometimes it happens that you open a package of ham and it gives off a very strong smell of sweat, piss... sexual odor. Yes, sexual odor, since it is caused by a pheromone found in male pigs and as they reach puberty or seek to be the leader of the herd, the pheromone increases and consequently the sexual odor. One way to avoid it is castration. When they are about two months old, they are castrated and thus the smell is avoided. If you find that smell, it means that someone has not done their job well.
