The plating of our veggie pop up restaurant looking perfect. We added the Korí Metodo Classico 2016 with the curry, the Bombo Nero Buono Petilant Naturele with the buffalobutter and the fantastic Solina Bellone Vendemmia Tardiva with the carrotsorbet and rubarb. Not on the picture was the succulent dish of fermented berlottibeanspuree and burned couliflowerspread with crispy white vegetables and fermented cucumber. Proud of the team .nl

The spring is in full fling, so the vineyards are turning a beautiful green again in Lazio. It has been raining quite a bit in the last months so it is looking like a good start of the season.

Deze prachtige riserva van 100% Nero Buono druiven komt uit het pittoreske plaatsje Cori, ten zuiden van de Castelli Romani. Hier zijn de wijngaarden van de cantina Cincinnato. Zij verwerken de regionale druif op meerdere plots, maar de druiven in deze 2017 riserva komen van de beste plekjes. Het resultaat is een heerlijk warme wijn, die serieus en gefocust vele lagen vertoond. Daarnaast is de fles ook nog eens prachtig. Ideaal voor tijdens de feestdagen met een vleesgerecht op tafel!

This beautiful riserva of 100% Nero Buono grapes comes from the pittoresk town of Cori, south of the Castelli Romani area. Here are the vineyards of cantina Cincinnato. They use the regional grape from multiple plots, but the grapes in this riserva only come from the best corners of the vineyards. The result is a lovely warm wine, which on times can be serious and focused with many layers. Next to this the bottle is a beauty also. Fits perfectly for the holidays with some rich meat dish on the table!

De 100% Cesanese van Cantina Gaffino is geweldig. Deze krachtpatser past heerlijk in dit seizoen. 'Cardinale' was de bijnaam die de pausen van Rome gaven aan een van de maten wijn die in de tavernes werd geschonken. Een prachtige mix tussen de moderne wijnmaaktechnieken en de historie van Lazio.

The 100% Cesanese of Cantina Gaffino is wonderful. This full bodied red fits the season perfectly. 'Cardinale' was the name for a measurement of wine poured in the taverns. A wonderful mix between modern vinification techniques and the history of winemaking.

De ultieme wijn volgens de methodes van Damiano Ciolli begint zijn reis als druif (Cesanese D’Affile) aan bush getrainde druivenranken welke al in 1953 zijn aangeplant door de grootvader van Damiano, Guido en zo’n 1 hectare beslaan in Olevano Romano. De druif wordt vervolgens met de hand geplukt op het moment van rijpheid en erna nog eens met de hand geselecteerd om imperfecte druiven eruit te filteren. De Cirsium is genaamd naar een distelbloem die veel in de wijngaard voorkomt.

De fermentatie van de druiven vindt plaats in betonnen vaten en maceratie duurt vervolgens ongeveer 15 dagen. Na de fermentatie wordt de Cirsium gerackt to foudre waar het zijn eerste jaar van rijping beleefd. Gedurende het tweede jaar gaat de Cirsium terug naar de betonnen vaten en na 2 jaar verdere rijping gebotteld. De Cirsium wordt vervolgens nog 1 jaar op de fles gerijpt voordat hij wordt verkocht.
De Cirsium was de doorbraak van Damiano en Letizia en heeft ervoor gezorgd dat alle ogen op hem en haar werden gericht. Door de eigenzinnigheid van beiden hebben ze de kijk naar een heel wijngebied verandert. Zorg ervoor dat je deze niet mist!

De ultimate wine according to the methods used by Damiano Ciolli starts it’s journey as a grape on bush trained vines, which have been planted by Damiano’s grandfather Guido in 1953 and stretch through 1 hectares of Olevano Romano. De grape is then handpicked and selected on ripeness and imperfections to make sure to only use the best grapes for the *Cirsium*, named after the thistle which grows in the vineyard.

The fermentation of the grapes takes place in concrete vats and maceration takes around 15 days. After fermentation the Cirsium is racked to foudre for one year, after which ripening continues for 2 more years in concrete vats before bottling. Then the ripening continues for 1 year in the bottle before it is complete.
The Cirsium was Damiano and Letizias breakthrough wine and made sure all eyes where on them. Due to their explorative nature the changed perfections of an entire wine region. Make sure not to miss this one!

Damiano Ciolli en Letizia Rocchi bewerken sinds 2001 de wijngaarden van de familie Ciolli, welke al zeker 3 generaties Cesanese D'Affile verbouwen op 7 hectaren rondom Olevano Romano. Deze druivensoort staat bekend om zijn hoge kwaliteit en hoort al meer dan 2000 jaar thuis in deze regio.

Van deze druiven maken zij de *Silene* (Cesanese Superiore) en *Cirsium* (Cesanese Riserva) door middel van natuurlijke fermentatie en de rijping die plaats in betonnen vaten. Hierdoor blijft het eigen karakter van de druif goed bewaard en hebben beide wijnen inmiddels de hoogste Italiaanse prijzen gewonnen. Geweldige wijnen met een geheel eigen smaak.

Damiano Ciolli and Letizia Rocchi are managing the vineyards of Ciolli since 2001, whose family are growing high quality Cesanse D'Affile on 7 hectares around Olevano Romano for over 3 generations. This variety is well known for it's quality and belongs to the region for over 2000 years.

Of these grapes the couple make the *Silene* (Cesanese Superiore) and *Cirsium* (Cesanese Riserva) through methods of natural fermentation and aging in concrete vats so to keep the character intact. Both wines have won some amazing prizes in Italy. No wonder with such great wines and unique taste.

Laten we beginnen met het beschrijven van de wijnmaker Damiano Ciolli, hij is samen met zijn vrouw gevestigd langs de wijngaarden die al generaties door zijn familie worden onderhouden in Olevano Romano op de berg Celeste. Deze regio ten zuidoosten van Rome staat bekend om zijn regionale rode druivensoort “Cesanese”. Deze druivensoort wordt hier al millennia gecultiveerd en is terug te traceren tot voor de tijd van het Romeinse Rijk. Deze druivensoort begint nu steeds meer bekendheid te krijgen door zijn eigenzinnige smaak en omdat deze helemaal op zichzelf staat en dat maakt de Cesanese bijzonder. Daarnaast werkt Damiano Ciolli op volledig onafhankelijke wijze en gebruiken enkel biodynamische en biologische technieken.

De ‘Silene 2019’ Cesanese Superiore DOC is het resultaat van hun jarenlange buitenland ervaring, waarin zij voor meerdere estates de wijnen vormgeven. Dit loont zich met een uitmuntende 3 Bicchieri beoordeling van de Gambero Rosso en een score van 4.0 op Vivino. Vol rood fruit als aardbei en framboos, met aardse smaken en in de donkere fruitregionen hints van braambes.

Let’s begin describing the winemaker Damiano Ciolli, who together with his wife Letizia around the vineyards kept by there family for generations in Olevano Romano on de Celeste mountain. This region just an hour southeast of Rome is famous for it’s regional species of grape called the “Cesanese”. This grape variety is being cultivated here for millennia and is traced back even to the time of the Roman Empire and before. This grape variety is beginning to gain more fame because of it’s own character which sets it apart from other varieties and gives the grape it’s special qualities. Also Damiano Ciolli works completely independent and uses only organic and biodynamic methods.

The ’Silene 2019’ Cesanese Superiore DOC is the result of there extensive experience also abroad where they shaped the wines of foreign estates. This paid of in the Silene with the excellent 3 Bicchieri award by the Gambero Rosso and a score of 4.0 on Vivino. Full red fruits like strawberry and raspberry, with earthy tones and in the dark fruits hints of blackberry.

January tastes better with Iuno! 100% cabernet franc (or as Francesco says: Cabernet Frasc), still young with around 7 months of wood aging already a powerhouse in a bottle grown in white wine dominated Frascati. We ordered a lot just to be sure. It's a wobderful mixture of texture, fruits and minerals, really showing the vulcanic terroir and the intersting mothergrape of both cabernet sauvignon and the merlot.
