L'arrivée au pressoir de nos raisins marque la fin du cycle de viticulture et le début de la vinification. Les vignerons-partenaires confient alors aux équipes d'Hervé Dantan, le fruit d'une année de travail. Ce n'est qu'en mars, qu'ils découvriront les assemblages lors des sessions de dégustation vins clairs.
