The ancient quarries of our estate protect the wines that are refined in silence and penumbra, giving fragments of history and magical sensations, which only this "hidden" part of Valpolicella can give. 🤫🍷

3 Fun facts:
Wine Harvest in Italy!
1. Italy is now the world’s largest producer of wine and produces 20% of the world’s wine.
2. In the past, the pressing of the grapes, in Italian “la pigiatura”, used to be a procedures the farmers did with their bare feet.
3. Wet grape, not-so-lucky grape! Rule number one of the good harvester is never to pick wet grapes. In fact, this could delay the fermentation, the process that turns the fruit into wine. ☺️💪🏼🍷

Rondinella: the floral feature.
This grape is highly valued for its resistance to low temperatures, to the attacks of gray mold and to many diseases. It easily adapts to all types of soils and does not suffer from drought. It gives to the wines floral scents slightly vinous and a dry character. 🍇🍷

Corvinone: the spicy feature.
For years this grape was considered to be a variety of Corvina, whereas it is a variety on its own.
Corvinone forms a large, not very compact, pyramid shaped cluster with two separate evenly shaped wings. The berry is larger and more oval in shape than Corvina with a thick pruinose skin that is blue in colour.
It's a very productive grape, its berries have thick skins and are very resistant to the attacks of gray mold, so it is ideal for the grape drying process. The best soils where it can be cultivated are the most hilly, less fertile, well-ventilated and with a good irrigation. To the wines of Valpolicella it offers aromas of sweet spices. 🍇🍷

Corvina: the fruity feature called "the queen of the red grapes" in Verona, is a strong, generous grape, quite resistant to the low temperatures of the winter and plant disease. This grape blooms in late spring and ripe in September - October: usually, the harvest starts in the end of September by the end of October, but in some very hot recent years, it was anticipated even by a month. It forms a medium sized cluster that is pyramid shaped and winged. The berries themselves are egg-haped with a firm purplish blue skin that is pruinose (covered with bloom). The Corvina gives excellent wines, with scents and taste of a crispy and ripe cherry.🍇🍷

🍇Harvest in Valpolicella 🍇
September is the month of harvest: the bunches of Corvina, Corvinone and Rondinella are ready to be harvested. Every grapes should be checked and only the best ones will be placed in a boxes (also known as ‘plateau’) for the “Appassimento”. This technique is used for Amarone and Recioto. You will then be able to see the differences between grapes and we can show how to harvest! Ready, steady, go! In seguito vi mostraremo pure come vengono raccolte e adagiate negli appositi plateau! Pronti partenza via! 😊👏🏼
Buona vendemmia a tutti! 💪🏼
