No rest for the Lloyd's Liquid Sunshines team. We just had enough time to crack open a bottle of our Eclectic Gin before getting back to work. This time we have an unordinary ex-sherry aged 15yo Linkwood. Why "unordinary"? Quite simply because it is unlike any of the sherry-aged whiskies we've tried since founding. It intrigued us and we trust it will intrigue you too!

Like all Islay distilleries, Caol Ila is mostly known for its signature peated whisky but it has also experimented with non-peated spirit for use in blending.

The distillery uses the same malted barley as Lagavulin but the end product differs considerably as a result of Caol Ila’s distillation regime characterized by long fermentation (60 hours) which gives the wash some of the tasting notes associated with the whisky: green olive brine, lemon zest and a sweet smokiness comparable to that of Austrian Rauchbier. Caol Ila’s lighter peatiness vs. Lagavulin is also due to the larger size of its pot stills which gives greater surface contact with the spirit which ultimately reduces the heavy phenols.

A DIAMOND IS FOREVER

If you're a rum enthusiast at some point you will have come across one of the many expressions of the Diamond distillery. The story of Guyanese rum could be taught in business schools as a case of industry consolidation that took centuries to run its course.

The Diamond distillery is one of the oldest distilleries in the country and literally the "last distillery standing" where all the stills from the previously acquired competitors were relocated. Indeed, the distillery is the largest supplier of "bulk" rum from the Caribbean and it was only during the last 20 years or so that its owners (Demerara distillers) started marketing individual expressions through the El Dorado brand.

This particular rum was distilled using a historical "Savalle" 2-column still originally sourced from the Uitvlugt distillery which gives it a medium body.

This Diamond is really "forever", as it is a perfect companion for all seasons. We've tested it to accompany a mascarpone-heavy tiramisu followed by a pairing with a Caribbean cigar. Needless to say that it passed both tests with flying colours so here we are ready to syndicate!

This single cask of rum has matured in a bourbon barrel 17 years with a mix of tropical and continental aging. The rum was bottled at cask strength (54% ABV).

The rum's nose is characterized by molasses and burnt caramel. On the palate it releases a mix of tangerine, vanilla, liquorice and fennel.

The finish is of bitter, chocolate orange.

▪️▪️▪️THE WHISKY
This whisky has been aged for 11 years (almost 12) in a 2nd fill ex-bourbon cask. As is often the case with peated Highland whiskies, the smoky taste of the whisky carries more earthy notes as opposed to the "briny" peat associated with their Islay cousins.   

On the nose the whisky combines notes of peat, barley and bergamot. Sweet on the palate with floreal, charcoal and salted butter. The finale reminds of Earl Grey tea.

This Ardmore expression is well paired with raw shellfish such as oysters or percebes.

▪️▪️▪️THE DISTILLERY
The Ardmore distillery was founded in 1898 by Adam Teacher, who together with his brother William Jr were the owners of William Teacher & Sons Ltd. William Teacher Sr was a successful entrepreneur who started serving whisky from a grocery shop in the 1830s and in the 1860s launched the famous Teacher's Highland Cream blended whisky brand.

The Ardmore distillery's purpose was to supply the "fingerprint" whisky for the company's signature blend, to which another 30 or so different single malt and grain whiskies would be added.

Ardmore was the last distillery in Scotland to make the transition from coal-heated stills to steam and with business booming, 6 additional stills were added to the original 2 reaching a capacity of 5 million litres per year.

Although the distillery's new owners Beam-Suntory group launched some Ardmore single malt expressions in recent years, the vast majority of the whisky it produces is used for blended products.

We're delighted to kick off our 2022 syndicates with this expression of .

William Teacher Sr was a successful entrepreneur who started serving whisky from a grocery shop in the 1830s and in the 1860s launched the famous Teacher's Highland Cream blended whisky brand.

Today I’d like to talk about another topic that has been trending in the world of , trying to put some clarity using a layman’s language: tropical vs. continental aging.
The difference between the two kinds of aging boils down to climate and its impact on the interaction between the barrel and the spirit. Warmer (i.e. tropical) climates seem to accelerate various phenomena ongoing in the cask such as the migration of wood constituents to the spirit as well as the formation/degradation of various compounds. Secondly, higher temperatures are correlated with a higher “angel’s share” (i.e. the % of the cask contents that evaporates every year). In general, the angel’s share associated with aging spirits in the UK is approximately 2-3%, whereas in tropical climates it can vary from 6-10%. The volume loss in continental aging seems to be mainly alcohol in the early years resulting in a lighter, smoother end product vs. tropical aging where much of the volume loss is water.

Most single cask rums tend to age quite a bit in Europe which is where the world’s largest bulk rum brokers are based (Netherlands and UK). However, there are also premium and super-premium rums that will have done a fair amount of tropical aging to accelerate maturation before finishing in Europe to smoothen out. As I’ve said before, at Lloyd’s Liquid Sunshines we don’t discriminate based on provenance as we know that there are plenty of quality rums aged in all combinations. Our rum syndicates so far (Fiji 16yo and WP Saint Catherine 14yo) have had a combination of tropical and continental aging, though we don’t exclude the possibility of launching a syndicate on a 100% tropical aged rum if something good comes our way.

In the first decade of my adult life I lived blissfully ignorant of the potential of . In fact, I thought it was nauseatingly sweet booze that only tasted good when mixed in cocktails. It was thanks to a project I worked on in the USA with a major spirits manufacturer that I started to realize that rum could actually taste really good just like scotch whisky. It was roughly at the same time that at my parents’ house appeared a bottle of Caroni. When I tried it with a cigar life was never the same again. 7 years have passed since that fateful encounter in which I have broadened my horizions and tried rums distilled across the globe. I have now reached the conclusion that I particularly like “heavy” rums such as this Saint Catherine we’re live on right now with a syndicate. Its main characteristic is that it’s texture and understated sweetness hints to some elements of a whisky.

Ho passato il primo decennio da adulto pensando che il fosse una roba da mettere nel cuba libre o al massimo nel mojito. Grazie a un progetto di lavoro in USA con una primaria società del settore distillati cominciai a capire che il rum poteva essere un distillato eccellente come lo scotch. Allo stesso tempo in casa mia era capitata una bottiglia di Caroni. Provando un dram accompagnato da un buon sigaro rimasi sconvolto dalla sua bontà. Sono passati oltre 7 anni da quell’episodio e nel frattempo ho cominciato a provare altre distillerie da tutto il mondo scoprendo di gradire in particolare i rum “pesanti” come questo WP Saint Catherine. La sua particolarità è che ha una struttura che per certi versi ricorda il whisky perché meno dolce.

Here at Lloyd's Liquid Sunshines we enable enthusiasts to build their personal collection, one at a time.

1. Our team is constantly on the lookout for quality casks. When we identify a cask that we deem is of particularly good quality we calculate the Duty and Delivery Paid (DDP) cost per 0.7L bottle of finished product and launch a syndicate through our website.

2. Through our website you can underwrite any number of bottles available from the syndicated cask by paying for them upfront and providing the delivery details and text you wish to be included in the syndicate member list on the back label of each bottle.

3. For each open syndicate a closure date will be clearly indicated. When the syndicate reaches full funding of the cask we will proceed with the bottling. If the syndicate does not reach full funding by the stated closure date, we will return the money paid to your account.

This has been aged in a bourbon cask for slightly over 8 years and it packs a serious punch. It is not accidental that Nikka acquired the distillery and has been using it as a key ingredient of its Japanese whisky bottlings.
