As a Natura 2000 site, Lambay is a sanctuary for the largest breeding colony of North Atlantic Grey Seals on Ireland’s east coast. Present year-round, the seals thrive along Lambay’s intertidal shorelines and skerries, navigating every phase of their life cycle—breeding, foraging, resting, and beyond. From August to December, pups are born on remote beaches and sheltered caves, cared for in small, close-knit groups.

🥃 How to make it:
Add 40ml Lambay Whiskey, 15ml Pedro Ximénez, 2 dashes of Chocolate Bitters, and 2 dashes of Plum Bitters into a mixing glass filled with ice.
Stir gently and strain into a whiskey glass over a large ice cube.

Long known as a place of reflection, it offers a natural escape from the hustle of the mainland. Inspired by this serene landscape, The Lambay Hot Toddy blends the warmth of Lambay Whiskey with wild herbs and zesty lemon. Enjoy it by a crackling fire after a coastal walk—savouring Lambay’s wild serenity in each sip.
Here’s how to make it:
🔹Pour 35.5ml of Lambay Irish Whiskey into a hot toddy glass.
🔹Add 15-20ml of the Wild Thyme & Mint Lemon Cordial, adjusting to taste for desired sweetness and herbal flavour.
🔹Top with 100ml of hot water, stirring gently to combine. Garnish with a lemon wedge and a fresh sprig of thyme.
Wild Thyme & Mint Lemon Cordial:
🔹Combine the zest from two lemons, a sprig of thyme, a sprig of mint, and 150g of sugar in a bowl.
🔹Cover the mixture and let it sit for at least 4 hours to allow the flavours to infuse.
🔹After 4 hours, add 150ml of fresh lemon juice and stir until the sugar is fully dissolved.
🔹Strain the mixture to remove the solids.
