Our Malt Irish Blend is a refined expression of our heritage.

First, we blend at least three independently sourced premium Irish single malts, both double and triple distilled, and bourbon barrel matured. It is then finished in our signature Camus Cognac Casks, exposed to the sea air, flora, and maritime climate of Lambay in our Sea Cask Room. Finally, we bring the whiskey to bottle strength with island’s own Trinity Well water, inviting you to savour the essence of the island, craftsmanship, and innovation.

With its off-grid, untouched terrain, Lambay Island offers a sanctuary for many seabirds, whether they’re year-round inhabitants or seasonal guests like Puffins. Puffins spend most of their lives in the open sea. But with the start of the breeding season, they’re drawn to rugged cliffs and remote islands like Lambay, free from human disturbance. Arriving in late April and gone by early July, their visit is brief but memorable, leaving us anticipating their next return.

Originally a 15th-century fort, Lambay Castle found new life in 1908, under the direction of architect Edwin Lutyens. The old fort was remodelled into a romantic Edwardian home that blends into the wild landscape for the new owners of the Island Cecil and Maude Baring. Still to this day, scholars from around the world admire and study this piece of history.

The current guardian of Lambay, Cecil’s great-grandson Alex Baring, upholds this legacy, maintaining the castle’s charm and sustainability. At Lambay Whiskey, we too honour this heritage, contributing to the conservation of the ancient buildings on Lambay for generations to come.

Lambay Whiskey combines centuries of Irish whiskey tradition with five generations of French cognac mastery. Our independently sourced triple-distilled Irish whiskey is then finished in rich and aromatic cognac casks from Maison Camus, hand-selected by the Camus Master Blender. Once they have crossed the Irish Sea, the casks are taken to our own bonded maturation warehouse on Lambay, which we call the Sea Cask Room. Here, the whiskey absorbs the island’s sea air and the complex flavours of the cognac. The result? A spirit as unique as the island itself.

We finish our whiskey in our Island Sea Cask Room. The structure is over 120 years old with walls over two feet thick, and with natural materials including lime mortar and render, the building acts as an absorption vault for the unique maritime micro-environment that Lambay possesses.

Lambay Island is home to Ireland’s largest mixed seabird colony, which includes the Puffin. With approximately 250 pairs of breeding puffins, the Island is integral for the survival of this species which is threatened by human activity around the world.

Lambay Whiskey is committed to the conservation of the Island’s wildlife and this summer we are working with Bird Watch Ireland to conduct a censorship study to better understand the breeding habits of the Puffin.

Our little hidden paradise is a Natura 2000 wildlife oasis, rich in flora and fauna. As the remnant of a long-extinct volcano, Lambay Island possesses a completely unique ecosystem, and a microclimate which is perfect for cask maturation.

Our Story

A Tale of Time and Tides

Two distinguished families, a new kind of Irish whiskey, and the island that inspired it all.

Once​ ​upon​ ​a​ ​most​ ​unusual​ ​island,​ ​two​ ​entrepreneurial​ ​spirits​ ​​ ​from​ ​two​ ​very​ ​old​ ​families decided​ ​to​ ​form​ ​a​ ​unique​ ​partnership.​ ​Together,​ ​they’d​ ​make​ ​a​ ​whiskey.​ ​​ ​But​ ​not​ ​just​ ​any whiskey​ ​–​ ​their​ ​triple​ ​distilled​ ​Irish​ ​whiskey​ ​would​ ​be​ ​one​ ​of​ ​dynasty​ ​and​ ​devilment,​ ​of​ ​rarity and​ ​refinement.

Their idea was to craft an innovative Irish whiskey inspired by the island of Lambay, ancestral home of the Baring family, and finished with the techniques and expertise of Maison Camus, ancestral home of Cyril Camus.
