Axia is a clear, refreshing, and extra-dry Mastiha - pronounced "Mas-teek-a" spirit distilled from the resin of the Mastiha tree found on the Greek Island of Chios. In a centuries-old, artisanal tradition, the sap is milked from the tree and left to dry in the wind. The crystals are then harvested, cleaned by hand, and shipped to the Plomari distillery. Here they are twice distilled in a process that combines the age-old art of the hand-crafted copper still with the cutting-edge science of the Master Distiller and her team.

Ingredients:
60ml Tanduay Coconut wash rum (see method)
1 teaspoon Demerara Gomme (2:1 Demerara sugar/water)
Method:
First of all you will need to make a batch of Tanduay coconut wash rum. To do this, you need to add 700ml Tanduay double gold and weigh 100g of organic coconut milk into a sealed bag. You then need to cook this in a water bath for 60C for one hour to infuse the coconut into the rum. Then freeze the bag over night and filter using a coffee filter or a cheese cloth. You should be left with a delicious rum, flavoured with coconut.
Add 60ml of coconut washed Tanduay rum into a rocks glass with one tsp of Demerara gomme filled with ice. Stir for 15 seconds and enjoy.

25ml Coconut Washed Tanduay Gold Rum
25ml Campari Cacao
25ml Sweet Vermouth
Add all ingredients over ice in a rocks glass and stir for 5 seconds.
To make the Coconut washed rum recipe, pour 700ml tanduay gold and 100g organic coconut oil into a vac pac bag. After sealing, make sure there are no leaks and add to a water bath at 60C for one hour. Take out of water bath and freeze over night. The oil should have solidified. Pour over a cheesecloth or a coffee filter and bottle.
To make Campari Cacao, add 700ml of Campari and 15g of cacao nibs together and let infuse for 24 hours. Filter before using.

30ml Condensed Milk
30ml Guinness - Original
A Couple drops of Ube Flavouring

60ml Tanduay - Silver
25ml Fresh Lime Juice
20ml Sugar Syrup (Gomme)
1 Calamansi
Cut calamansi in half and muddle into a shaker. Add rest of ingredients and fill with ice. Give a good shake and strain into a coupette or martini glass. Serve straight up.

Canerock Spiced Rum came into stock for the first time today. The team at Maison Ferrand have done a fine job using aged Jamaican rums at its core, including a generous helping of high-ester rums.

The tasting notes say it all:
Nose: Rich and complex with pastry notes of vanilla, coffee beans, dark chocolate and coconut.
Palate: Opening with sweet caramel, soft spices and raisins, then allspice and delicate oak tannins developing with each sip.
Finish: Hot and sweet at the same time with poppy seed pie, dark cherry, prune, coconut and fresh notes of mint, ginger and cloves.

The Limited Edtion Plantation Rum Guyana 2007 - Coming Soon!
This exceptional rum is from Demerara Distillers, aged for 13 years in Guyana and then for 2 years in Cognac barrels.
Nose: Intense and rich, it starts on pastry notes of cocoa and almond, vanilla and lime peel.
Palate: Rich and oily, it follows the nose with more flowers and orange, to***co, raisins, berries, almond and hazelnut and also deep notes of balsamic and molasses, almost smoky, with leather and medicinal notes of ginseng.
Finish: Very long, spicy and fresh on pepper, cinnamon, nutmeg, liquorice and chocolate.
