My signature dessert.
Banana, caramel, yuzu. 🍌

This was specially crafted for a round in and the judges licked the plate clean. I have refined the presentation over the years and I’m at a point now where I’m very happy with it.

It will be finished with a cognac foam which will cut through the sweetness of the dish.
