Product Spotlight: BIZI-GOXO Sidra de Hielo (Ice Cider)

The Basque Country has local apple varieties that have been used to make cider since time immemorial. There are sharp, sweet and bitter varieties. Some are early ripening and others late ripening, among which the Errezil variety stands out. Sharp and rich in sugars at the same time, aromatic and long-lived once harvested. Its natural tendency is to raisin; in its over-ripening phase it loses water and wrinkles instead of rotting. During this process, all its values are concentrated: acids, sugars, aromas, etc. It is an ideal raw material to make an ice cider.

Now available from Quality Ferments, zapiain’s ice cider is a sweeter option perfect for pairing with desserts or enjoyed simply as a digestif as an apple based alternative for after dinner drinks.

cider’s take on Italy’s bittersweet summer aperitif. Part of the Core Rotator series of innovative- yet-accessible new ciders, Spritz is full bodied with apple and citrus on the palate. Balanced finish with bitter, herbal notes.

Rheum is now stocked by - as well as featuring on the drinks menu as a suggested aperitif in the restaurant!

A favourite, Rheum is a dry sparkling wine made from Danish organic Rhubarbs, bottle fermented the traditional way. The fruit wine by Denmark’s Cold Hand are sought after by high end restaurants around the world and has now made it to the UK.

Product spotlight: - Rheum

This is the product that started the Quality Ferments adventure. In 2020, at CidrExpo, our founder Mike first tried Rheum, a sparkling Danish rhubarb wine from Cold Hand. He brought the product back to the UK, where friends and family fell in love with it too. Unable to purchase it in England, he began importing it himself. The rest is history.
