Out of winter hibernation, and this baby is about to work nonstop to crack through all the apple cider which has been fermenting slowly over winter, to make our new make apple spirit.

A very Happy Christmas and a God Yul to all our supporters. Thank you to everyone who has bought a bottle or drunk a cocktail containing my spirits this year, every little helps these days! It's so wonderful to see everyone sharing special moments with a glass of my booze in their hands.

To everyone who has received a gin experience voucher for a Christmas present I'll look forward to seeing you very soon for a wonderful day of booze making.

In the distillery grounds the damsons are ripe and falling to the ground and the fig tree is in its last throws of summer. This put me in mind of a cocktail I usually love to make in winter, but with this weather 🤷... a fig and plum sour.

50ml Plum brandy
20ml Creme de Figue
20 ml lemon juice
10ml sugar syrup
1/2 egg white

Sours are great way to drink fruit spirits. I usually prefer unaged spirits for my sours, but the fig liqueur in this version adds extra sweetness which can carry the slight astringency of the cask.

I'm coming to the end of the stone fruit season, but still plums coming in to be fermented.

Our Apple Brandy is made using surplus apples from local growers...but not this batch!

Five years ago we were contacted by a premises owner who's tennant had disappeared, leaving 20,000 litres of westcountry style cider to go to waste.

This is the first cask of spirit we made from that cider. We are used to our single cask releases varying a bit from year to year as varieties change, but you can really taste the bittersweet cider varieties in this release.

All orders from now will receive this new release.

A piece of pancake scrap artfully caught on the fermenter as we chill a fermentation down to yeast pitching temperature.

Fermentations are heated up from waste heat from distilling, and cooled using our wildlife pond, ensuring that the energy we take from renewable sources is used as efficiently as possible with minimal waste or single use resources.
