A lovely afternoon chatting to customers at . The new spirits shop next to the wine shop on Pall Mall should be a mecca for spirits fans with their superbly curated selection of bottles from around the world.

In the distillery grounds the damsons are ripe and falling to the ground and the fig tree is in its last throws of summer. This put me in mind of a cocktail I usually love to make in winter, but with this weather 🤷... a fig and plum sour.

50ml Plum brandy
20ml Creme de Figue
20 ml lemon juice
10ml sugar syrup
1/2 egg white

Sours are great way to drink fruit spirits. I usually prefer unaged spirits for my sours, but the fig liqueur in this version adds extra sweetness which can carry the slight astringency of the cask.

I'm coming to the end of the stone fruit season, but still plums coming in to be fermented.

Last month we were recognised in TWO categories at the drinks industry's 2023 Sustainability Awards.

Highly commended for both Sustainable Use of Raw Materials, and for Waste Prevention & Management. SEXY.

The Judges said "It is no mean feat to take on so many challenges at the same time but the culture of this business means that it is simply what they do rather than an ongoing ambition. Demonstrating positive change at all levels from farmland to waste streams is an inspiration."

Our next cocktail event is live and it’s the last of 2023 because then we will be getting all festive. On Thursday 9th November, we are being joined by the fabulous - these guys are doing very exciting things.

Will, their founder is joining us for the evening and guys it’s going to be a good one - come along have four delicious cocktails and hear about a local distillery doing very cool things! Towards the end of a distillation, higher alcohols are concentrated in the tail fraction. Some of these are below their melting point in the cool liquid (t-butyl alcohol for example melts at 25C), so they condense into waxy droplets. . It is quite beautiful. If you try and catch one of these shooting stars on your finger it will melt instantly, but it's hypnotic to watch their dance. . Fermenting raspberries. This year has been huge for raspberries, and so it's not only the supermarket reject we've taken but good fruit that just doesn't have a buyer in the few days that it is in perfect condition. We've had so much that we're fermenting a ton to make an eaux-de-vie alongside our regular Raspberry Ghost. Brace yourselves.
