Wrapping up the last distillation of raspberry must for this year's Raspberry Ghost!
This custom fabricated steel bin has a false floor so separates liquid and solid waste in our whole-fruit distillations (as opposed to, say, cider) so we can send to anaerobic digestion and animal feed separately (where appropriate).
It's a messy business!

Towards the end of a distillation, higher alcohols are concentrated in the tail fraction. Some of these are below their melting point in the cool liquid (t-butyl alcohol for example melts at 25C), so they condense into waxy droplets.

It is quite beautiful. If you try and catch one of these shooting stars on your finger it will melt instantly, but it's hypnotic to watch their dance.

They also taste disgusting so it's a skilled process to make sure they don't leak into your spirit heart.

Blackstrap Molasses. Its not like the molasses you cook with. Thicker, darker, bitter, but still with the underlying sweetness which we rely on to ferment into our Wealden Rum.

It's at the distillation phase that we can extract the alcohol and delicate aromatics, controlling the funkier part of the fermentation metabolites.

It's a bugger to work with. It sticks to everything. But it makes a lovely spirit.

Fermenting raspberries. This year has been huge for raspberries, and so it's not only the supermarket reject we've taken but good fruit that just doesn't have a buyer in the few days that it is in perfect condition. We've had so much that we're fermenting a ton to make an eaux-de-vie alongside our regular Raspberry Ghost. Brace yourselves.
