ALL PACKED UP, BACK FROM JAN 22ND...

Wow, what a year. The fatigue is definitely setting in now, as is the magnitude of what we have managed to achieve in the last 12 months. We've taken Natural Science from a small wine store that happens to be Melbourne's only all-Australian bottle shop to a neighbourhood bar with outdoor trading and a shop wide capacity over of 60 people. We've created a community minded space that we ourselves would want to drink in while still managing to stay true to the mission of supporting independent Australian producers, and we are beyond proud.
Natural Science has reached it's final form.

It's honestly been a slog to get to this point in the evolution of Natural Science and we thank you for helping us survive, grow and push forward. It doesn't matter if you're here frequently or drop in occasionally, we would not have arrived at this point without you. Every chat, every good word, every review, every supportive email to council, every single sale, all of it has helped us get to this point and we couldn't be more appreciative.

Thank you, immensely.

HEY, HAVE A BLOODY GOOD ONE TODAY...
No matter what form your festivities take today, we hope it's filled with great folks, tasty things and excellent times. It's really been a year and we all deserve the good right now.
Also sending a big hug to anyone that might be missing a special someone at the table this year. We both know that feeling all too well and this time of year is always tough but we're thinking of you.

Our dear friends Glenn and Serena from will be onboard to share not one but two new releases this Saturday. Take respite from the Christmas chaos and pop by for a splash of Daisy, their recently released barrel aged gin, and the new vintage of Festivus alongside classic fan favourites Phyllis and Marie.

Drop on by from 3 - 5 and get amongst it, could be a perfect chance to pick up that last minute gift or just treat yourself to a couple of stress relieving gin and tonics.

Drumroll...

Zero objections is a huge surprise. We have always received a couple objections each time we go to planning. The problem with these objections is the time we lose due to the 28 day appeal period the objector is entitled to once the decision is made by the planning team, plus the time either side of this period for processing.
This is sadly the system and this is generally why planning applications and amendments can take so long.
Not this time though.
What a time to be alive.

It's not all sunshine and rainbows out there for our independent producers. Another tough year has meant our local industry needs your support more than ever and given the supreme quality out there, why wouldn't you.

This Saturday we have and Pete from Eminence Wines sharing their truly delicious Whitlands wonders.
Perched high at the top of the King Valley on the Whitlands High Plateau, the Eminence Vineyard is Victoria's highest at 841m above sea level and one of its coldest. Planted to Chardonnay and the three Pinots, Noir, Meunier and Gris, the wines are elegant, aromatic and supremely refined, and showcase their cool climate origins in every sense.

This will be the last wine tasting for 2024 and what a perfect way to wrap up, with some excellent wines from excellent folks.
Lock this one in the diary and drop on by, it'll be a very, very good one.

Sorry friends, no dogs now.
Sadly some goon made a complaint to the council and we can't allow dogs in the shop anymore.
We are however working hard to get our outdoor permits through so the dog ban will hopefully be short-lived.

This Saturday we welcome our Mitcham neighbours to the tasting table to share their excellent gins. Recently opened and highly ambitious, Dutch Rules are broadening the scope of gin to include influences from Sri Lanka, Thailand, Malaysia and beyond to great success. The gins are interesting, refreshing and versatile, and add a fresh take to the saturated Australian gin market.

Free and casual as always, pop on by for a chat and a sip.

So what's this then?

This here subtle little notice is hopefully our last trip to council planning. This amendment will allow us to have a modest outdoor area to allow you to soak up some sun and sip some exceptional drinks. Sound dreamy? It hopefully will be.

As per our last two trips to council, we will likely receive a couple baseless objections. If you do feel inclined to submit some support again, the details are attached and we will be forever grateful.

It's been a big week... It was definitely a bit of a slog but we've finally arrived at a shop that we're happy with. When we opened the bar we did the best we could at the time but we always knew we would need better, and here it is. More space, more seats, more function, we hope you like it. Huge thanks to Joyce and Gab, and Mark, Liam and Ollie from @mrm_construction_au for helping make this happen.
