Jose Andres does not move the colony nor does he stimulate the reproduction of the hive with artificial food. He prefers to leave abundant honey reserves, giving the hive the confidence to develop and reproduce according to its own rhythms, without artificial influence.

The quality and health of his bees is much more important than the quantity of honey, he tries to understand the bees and the ecosystem itself as a whole, in the process obtaining a honey that helps to maintain and restore the biodiversity of Sierra María Los Vélez.
