Ollie stopped by Bodegas Vega de Yuco yesterday during a heavy Calima to see the pre-fermentation processing of the Diego and Moscatel grapes, a key duo in the Yaiza Afrutado blend. 🍇 These grapes were harvested over the weekend and chilled overnight to help retain their fresh aromatics and quality before being pressed. 🍷 Following the decanting and clarification of the must at cold temperatures, fermentation will then begin! These are some of the first Malvasia Volcanica grapes arriving at the winery which will be used for the Brut sparkling wines. 🥂 Early word is, that after a dry winter, and relatively cloudy spring, is that quality seems very good but yield will be on the very low side.
