Form & Insight 2020

Once again, we continue to expand on the foundations of two of the world’s most fabled beverages: beer and wine. Like all great stories, Form & Insight starts off as a summary of its distinct parts. However, the beer and wine quickly commingle and transform into a product of uncanny simplicity.

Typically, when worlds collide, the event is catastrophic. The result is either the total annihilation of each body or the formation of an entirely new astronomical object. In the case of Form & Insight, the collision of wine and beer produces the latter outcome.

Wines from Bordeaux are mystical creatures. Deep with complexity, teeming with unrelenting exactitude, dark and mysterious. Very few wine regions in the world can recreate such immense and utterly fantastic liquid profusions.

Form & Insight aims at capturing the elegance and finesse of Bordeaux wines, with the bold and complex wealth of flavors found in our Danish Wild Ales.

We imported Cabernet Sauvignon and Merlot grapes from a well-respected winery located in Haut-Médoc on the left bank of the Bordeaux wine region in France.

The grapes were macerated independently on blends of Danish Wild Ales aged in oak between 1-1.5 years, with 5 daily punch downs. Following maceration and prolonged skin contact for each grape varietal, the resulting singular beer/wine hybrids were individually aged in oak for 6 months prior to blending.

The final blend was assembled following the same guidelines you would find in Bordeaux wines from Haut Médoc: 70% Cabernet Sauvignon and 30% Merlot. The final blend underwent an additional six-month oak maturation period prior to packaging.

With careful consideration of the form of our Danish Wild Ale and a sliver of insight into Bordeaux wine, Form & Insight is born. It is a perfect example of how the collision of different worlds can result in something beautiful.

Form & Insight 2020 was packaged in clear 75 cL bottles to highlight its elegant natural colour. As with our other beers, it was primed with sugar to produce carbonation naturally in the bottle. After packaging, it was aged for 10 months in the bottle prior to release.

Last year we visited to whip up an exciting take on our beloved Beer Geek Breakfast. We wanted to make it local - and what's more local to the Balkans than Medenka Liubimka.⁠
⁠
Beer Geek Balkan Breakfast is an Imperial Dessert Stout brewed with Medenka pastries and vanilla. The beer was brewed for over 16 hours with a double mash schedule for a fuller body. A total of 50 KG of medenka pastries were added in the middle of the boil with 60 KG of honey and 60 KG of muskovado sugar added afterwards 🍭⁠

Havnesæson by Mikkeller Baghaven pretty much summarizes what Baghaven stands for. A base of all locally grown and malted barley is enhanced with malted wheat, raw buckwheat, and emmer. Generously hopped with French Aramis in the kettle, and New Zealand Motueka and Wai-iti in the whirlpool. ⁠⁠

Havnesæson is the perfect balance of cracker malt character, grassy and citrus hops, and acidity from extended ageing of 12 months in a large foeder. A staff favourite, and quickly becoming our flagship beer!⁠⁠

The Spanish Priorat wine region is home to rocky soil, steep slopes and harsh growing conditions, which produce grapes with pronounced minerality and boldness. Known primarily for its complex and intense red wines, Priorat has a hidden gem: Granatxa Blanca, a white variety characterized by its freshness and aromatic complexity.⁠
⁠
We imported fresh Garnatxa Blanca from Priorat to our Blenderia in Denmark. The grapes were immediately destemmed and pressed, and we blended the juice with 1,5-year-old Danish Wild Ale and then left it to ferment and age in stainless steel.⁠
⁠
Blanca highlights this rare Priorat grape with intense pear, honeysuckle and citrus aromas, complemented by the classic Baghaven “funky” cellar character of our Danish Wild Ales. ⁠
⁠
Balanced in acidity but not lacking in intense minerality, Blanca is perfect for either a hot summer day or a cold winter night surrounded by friends and family.⁠
⁠
The 2021 harvest was the first obtainable harvest for this particular vineyard, making Blanca 2021 the first of its kind for both Baghaven and the farmers who artfully cultivated the grapes.⁠

💎🍷Highway of Diamonds 2020⁠ Mikkeller Baghaven 🍷💎

This a continuation of our series of beers designed to blur the lines between wine and beer. A hybridized Danish Wild Ale/wine concept straddling the border of definition for each style, Highway of Diamonds 2020 is guaranteed to change the way to think about the respective worlds from which these libations stem. ⁠
⁠
We imported organically farmed Syrah, Grenache, and Marselan (Cabernet Sauvignon/ Grenache hybrid) grapes from in the Luberon AOC located in the southeastern extreme of the Rhône wine region of France.⁠
⁠
The grapes were macerated independently on blends of Danish Wild Ales aged in oak between 1-1.5 years with 5 daily punchdowns. After maceration and prolonged skin contact for each grape varietal concluded, the resulting singular beer/wine hybrids were individually aged in oak for 6 months prior to blending.⁠
⁠
The final blend was assembled following the same guidelines you would find in some Rhône style wines, consisting of the following components: 55% Syrah, 35% Grenache, and 10% Marselan. An additional oak maturation period of three months was completed for the final blend prior to packaging.⁠
⁠
Highway of Diamonds 2020 was packaged in clear 75 cL bottles to highlight its beautiful natural color. As with our other beers, it was primed with sugar to produce carbonation naturally in the bottle. After packaging, it was aged for 8 months in the bottle prior to release.⁠

🍇🍓Rubus of Rose 2021 from 🍓🍇

The raspberries selected for our Rubus of Rose 2021 vintage come from the same farm in Give, Denmark that we have worked with in previous years, and their 2021 raspberry harvest produced some especially delicious fruit!

We selected a blend of Danish Wild Ales aged in oak for one and two years and macerated them together with the freshly harvested organic Glen Ample raspberries.

This 2021 vintage is inspired by some of our earlier Rubus of Rose vintages in that we once again went for a very high fruit-to-beer ratio - over 600 grams of raspberries per litre of beer!

Bright fruitiness and acidity are rounded out by the complexity of the base beer, forming a perfect marriage between these special raspberries and our signature Danish Wild Ales.
