PERGOLACCE: A deliciously light red made with Alicante Bouchet. De-stemmed and fermented on skins for just one day, before ageing in stainless steel. A super summer worthy red to enjoy by the water!

ROCCOLINA: A verrry lightly macerated wine made with a long, exciting variety of grapes. Two days on skins and 6 months in steel. Light yet complex, and is fabulously moreish.

MILLOCCHIO BIANCO: A delicious blend of grapes like Trebbiano, Malvasia, Claudette & Ansonica - this wine is macerated for longer, two weeks to be precise. As well as ageing 10 months in oak, and 6 in bottle. Enough time to let the flavour develop into an elegantly structured, balanced and delicious sip.

CORINDO: A Rosé that blushes in the sunshine, made with local varieties like Alicante, Ciliegolo & procanico. 6 months in steel to really let those fruity notes shine through. A mood lifter for sure.

Paraschos is a family-owned winery located in the Friuli region, close to the town of Gorizia on the Slovenian border. The Greek-born, Evangelos Paraschos, moved to Friuli back in the 80s. He discovered the wines of the Friuli legends, Gravner and Radikon, and felt inspired to start making wine himself back in the 1990s. Today, it is his son Alexis who runs the winery.
They work with a mix of triadional and international grapes such as Tocai Friulano, Ribolla Gialla, Pinot Grigio, Malvasia, Merlot and Pinot Noir. Since 2003, cultivation in the fields has been organic and all 7 hectares are cared for with great respect for the plants and nature.
Gravner and Radikon make fantastic wines, but there is no doubt with us - Paraschos are just as good and they make some of the very best wines you can find in the Friuli area! Expressive, complex and energetic as hell!

Morra Gabriele is a winery located in the heart of Barbaresco, with a great tradition and history dating back to 1880.
Today, the two young friends, Gabriele and Stefano, run the winery. Gabriele is a typical Piedmontese winemaker who has worked in the vineyards for most of his life. Stefano is a trained sommelier and has worked in many fine restaurants around Europe, but also in various vineyards in Gevrey-Chambertin.
Back in 2013, they decided to put their heads together and took over the winery, originally called Pautasso Vini. They renamed it after Grabriele’s grandfather who started the winery back in the day.
Gabriele is the man who does the hard work in the vineyards and works with great respect for old traditions.
They grow everything with an organic approach and mix a little with some biodynamic methods. In the cellar, it is Stefano who does the hard work and controls every step of the vinification of the different wines. All wines only ferment with wild yeasts and take place in steel and concrete tanks. For aging the wines, he uses a mixture of steel tanks and old barrique.
Stefano & Gabriele make very, very elegant and precise wines, with pure expressions and respect for traditions! We are thrilled to be able to have them in our cellar!

Let’s take a deep dive into Nebbiolo! 🍇
Nebbiolo is native to the #piedmont region of Italy (though there are a mintority that believe it hails from the Lombardy region instead), where it helps make the DOCG wines such as Barbaresco, Barolo, Gattinara & Roero.
Nebbiolo is a pretty fussy grape: it flowers early, ripens late and can sometimes struggle to ripen fully. It prefers specific hillside locations, as well as clay and silt based soils. It takes a lot of talent to really harness the potential of these tricky grapes.
Tannins are very present in Nebbiolo wines, and they are usually matured and aged, or go through an extended maceration, to help soften them up. As well as tannin, expect notes of rose, cherry, leather, coffee and anise, with big red fruit notes on the nose too.
As for pairing, red meat is your friend: slow roasted fatty meats, or even game can work fabulously well. Charcuterie, white truffles & salami are also a very welcome pairing.

La Busattina is located in Maremma in the southern part of Tuscany. Emilio Falcione is the man behind these beautiful wines. In addition to the 4 hectares of vineyards, he masters a farm of 41 hectares with olive trees, goats, horses, bees, cows, geese and donkeys! In the Fields he works with grapes such as Sangiovese, Ciliegiolo, Trebbiano, Ansonica and Malvasia.
The house has been biodynamically certified since 1997. All work in the vineyards is done manually - machines: no thanks! Fermentation takes place spontaneously, only with wild yeast, and the wines are filtered and not clarified before bottling. A minimal amount of sulfites is added at bottling. This results in wines that are vibrant, clean & crisp, with a fabulous balance.
We import natural and living wines from Italy to Denmark, and we ensure to work with producers that take a sustainable, delicious approach to their wines, as well as having a tremendous respect for the surrounding nature.

Natural wine isn’t a trend for us. It’s about celebrating organic and biodynamic practices that keep vineyards vibrant and alive, free of poisons that infiltrate the land, the wine, as well as the living things interacting with it.

In 2024, with centuries of knowledge behind us, and the latest science at our doorstep, there is no reason to comprise on flavour or ethics. Let’s take a deep dive into the Fiano grape! 🍇
Fiano is an Italian white grape variety grown primarily in the Campania region of Italy and on the island of Sicily. Now days, you can also find Fiano grown in regions of Australia too!

Part of Fiano’s charm is that it will embrace many different wine styles: from refreshingly crisp and mineral, to wines more indulgent and rich.
.
Fiano, though growing for years in the countryside, only started to receive real recognition in the 90s, and only in 2003 that the Avellino DOC was established, officially recognising the wines. Today, it’s recognised as one of the great & versatile Italian varietiels.
.
Expect notes of honeydew, Asian pear, hazelnut, orange peel & pine. This wine can easily stand up all by itself, but it can pair fabulously with savory glazed light meats, or its acidity also pairs well with many spicy Asian or seafood dishes.

Cantina Giardino is a small vineyard of about 6 hectares located in Ariano Irpino, east of the city of Naples in the Campania region. Cantina Giardino officially started back in 2003, after several years of experimenting with winemaking. Antonio Di Gruttola wanted to be sure that it was possible to make wine the natural way, without the use of chemicals and machines. Luckily for us, Antonio found the way 👏👏
They work with old, local varieties such as #Aglianico, #Greco and #Fiano planted on the region’s volcanic soil. The grapes are grown organically and all work in the fields is done manually, with lots of love and respect for the vines. Fermentation starts spontaneously, only with the use of wild yeast and without temperature control. The wines are bottled unfiltered and without added sulphur. Antonio ages his wines in a combination of large casks made from local wood and amphoras made on clay from their own vineyards, by Daniela Di Gruttola!

Curto Marco di Nadia Curto is a family business with many years behind it. Marco and his wife, Adele, started making wine in the La Morra section of Barolo, in the Piedmont region and in 2000 @nadiacurto joined her parents to help them. Today, Nadia runs the show!

For more than 60 years, the family has cultivated 4 hectares planted with the traditional Piedmont grapes Dolcetto, Barbera and Nebbiolo. Right from the start, there has been a great focus on doing things the natural way and with great respect for nature and the plants.

Nadia produces 2 different types of Barolo - La Foia and their cru, Arborina.
La Foia is produced according to the traditional method with long maceration and long aging in large, used wooden barrels. Arborina is produced according to the modern method - a method Nadia learned from her uncle, Elio Altare, who also produces great Barolo. It is with shorter maceration and storage in small casks.

The wines Nadia Curto produces are of very high quality. They are super clean and really reflect the terroir and region where they are produced.

In essence, natural wine is going back to the old traditional methods of making wine, where no additives, herbicides or preservatives were used during the process of making it. Typically, natural wine is also fermented with native yeasts, and are unfiltered. Other names also include low-intervention wine, raw wine or naked wine.

The health of the vineyards are allowed to flourish under natural processes, left to Mother Nature to keep the soil rich, the grapes full, and the micro-life on the fields buzzing. There is something quite poetic about the wines closely reflecting the ecology of the individual vineyards, with each harvest passing. A phenomenon that used to be common, but due to the fast,changing world, is now is unfamiliar to us.

We’re glad to be a part of this old-but-new development. We’re glad Copenhagen is a champion of natural wines and their producers. We’re glad for the future, and we’re very glad for the wine.

Pét-Nat, shorthand for ‘Pétillant Naturel’ means naturally sparkling wine, and is a traditional method that dates back before champagne. It’s called ‘method ancestrale’ and means that the wine is bottled before it’s finished the first (or primary) fermentation, and without any additions of sugar or yeast in the bottle, resulting in a lively, lightly sparkling wine.
.
Typically, a pet-nat would be lower alcohol (10-12%), unfiltered, and traditionally cloudy. It’s also often bottled with a crown cap rather than a cork. They also tend to be a little friendlier on the wallet too 👌
.
Bottles like ‘Perfranco’ on our webshop are a great example of a pet-nat (link in bio), but there are so many to choose from - all over Europe, so get cracking!
