Jalapeรฑo literally means "from Jalapa," referring to the city of Jalapa in Veracruz, a state in eastern Mexico. Interestingly, the places where Jalapeรฑos are most commonly cultivated are Oaxaca, Chihuahua, Sinaloa, and Michoacรกn. Its origin, however, is not Jalapa. In her book *Capsicum and Culture: The History of Chilli*, Janet Long-Solรญs mentions that there is archaeological evidence suggesting that the chile originates from Mexico, specifically from the regions of Tehuacรกn, Puebla, and Tamaulipas, and that it has been cultivated since 7000 to 2555 B.C.
In Mexico, the fresh Jalapeรฑo is called by many names depending on the region, but the most common name is Cuaresmeรฑo. This is because during Lentโa liturgical season in Catholicism celebrated before Holy Week, where meat is not eaten on Fridaysโit was a chile widely used for stuffing with cheese or tuna. The most common dried jalapeรฑo chiles are "Meco," "Chipotle," and "Morita."
