To support the Estancia Raicilla cocktail competition we have running, we have a masterclass and Q&A session to help you learn more about Mexico's distilling history.

Agave Lux Australia is thrilled to announce the 2024 Estancia Raicilla Cocktail Competition! Estancia Raicilla, proudly Australian-owned and operated, is crafted in the highlands of the Sierra Madre in the stunning state of Jalisco, Mexico. Our remote distillery and farmland not only produce exceptional spirits but also provide essential employment opportunities and boost tourism, supporting the remote communities of the mountains.
This inaugural cocktail competition is targeted to NSW and VIC only. While we aspired to go national, it is crucial to preserve the resources required to bring this handcrafted product to Australia, yet still deliver an exceptional experience for all involved.
Why enter? Beyond expanding the Raicilla category and sharing its rich cultural story, both NSW and VIC have three prizes up for grabs each:
1st place: A trip to Mexico in 2025
2nd place: $500 in cash
3rd place: A generous supply of Estancia Raicilla
THE QUALIFYING ROUNDS:
- Submit your entry by 30th September to [email protected].
- Create a cocktail that best showcases Estancia Raicilla.
- Feature the cocktail on your menu throughout spring and summer.
- Share it on social media, tagging and using the hashtags and .
- On Friday, 18th October, the top 5 scores in each state will be announced.
SCORING THE STATE FINALS:
- Present two drinks to a panel of three independent judges.
- You will have 10 minutes to prepare and present your cocktail and a ‘perfect simple serve.’
- Present your first drink, the ‘perfect simple serve'. No homemade ingredients.
- Present your second drink, your winning cocktail.
- NSW final: Monday, 11th November.
- VIC final: Monday, 18th November.
- Exact judging criteria are available upon request.

Puntas are the pinnacle of distillates, normally reserved by the maestros as their private batches and those brave enough to sip at above 60% ABV. We say consuming this is like waiting for a rocket ship to take off on your face, this one is actually very drinkable, and the length and acidity leave the mouth-watering, unlike any other Raicilla we have tried.
The Puntas, in this case, refers to the upper head portions of the agave hearts, it is the first run of upper liquid released in the first distillation, commonly referred to as the heads. This Raicilla is 63% ABV (126 proof), but it is elegant, subtle, and incredibly complex. It’s produced by Gerardo Pena with agave Maximiliana in Jacales, Jalisco. Late in 2023 we were fortunate to spend a day with Don Gerardo at his taberna, enjoying the fruits of his labour, eating, singing and having a great time, where he announced his retirement from distilling 😭😭
Puntas ABV: 63.6% (126 proof)
Agave Species: 9-year-old wild Agave Maximiliana
Maestro: Don Gerardo Peña, “El Lobo de la Sierra”
Village: Jacales, Sierra Occidental de Jalisco
Oven: Masonry brick oven for 4 days
Mill: small corn mill
Fermentation: stone and plastic food-grade containers
Still: double distilled in stainless steel
Smells like: Ripe red strawberries, lavender, lemongrass and pineapple and a slight metallic finish from the steel stills
Tastes Like: Sweet aloe vera, currants, red grapes and apples with a touch of candy.

As an industry we like to throw-around words like ‘Ancestral’ and ‘Hecho a Mano’ (made by hand) without understanding the true, cultural meaning. What does it actually mean and what does it actually look like?
Here are some pictures to show you what "Ancestral" and “hecho a mano” looks like. Working only with what the land gave him, hand harvesting only wild agave, cooking underground, milling by hand with wooden mallets, and fermenting with wild airborne yeasts inside volcanic stone pools that were chiselled from stone. Distilled once using hollowed-out Higuera tree trunks and clay ovens all moulded by hand. The only thing not natural is obviously the plastic buckets in the picture that Don Raphael uses to capture the distilled spirit.
This is Don Rafael, he is the last known Wixárika producer using the true ancestral methods to create La Venenosa Etnica Tutsi. The Wixárika people, also known as the Huichol, are a deep-rooted indigenous group, who practice a Mesoamerican religion and live in the Sierra Madre Occidental range across several Mexican states, in this case, Don Rafael, lives remotely in the mountains of Jalisco, in the village of Tatei Kie, La Guayaba. The Huichol collect and consume pe**te, a cactus with hallucinogenic properties, as part of their spiritual practices, during this consumption we unearth many vibrant and stunning yarn paintings and beaded designs that reflect their unique worldview.
This specific batch is made from wild foraged 10-year-old Masparillo agave from 2016.
Smells like: Fresh lavender, pine, cloves and smoked cheddar
Tastes Like: fresh pine, soy, diesel and grilled fish

No fancy filters, no fancy backgrounds, just natural colour that highlights the effect of 3 months of Oloroso sherry cask aging. This is a completely new frontier for Raicilla and one any dark spirit lover should have in their bar cart or secret stash.
In the search for a greater understanding of how oak barrels and wood imparts flavour and evolves the sensory experience, the team went left of field in search for barrels. With Oloroso casks popular for maturing Whiskey, this technique is a new and unique frontier for Raicilla. There are not too many, barrel-aged Raicilla’s on the market full stop, and in this case, the use of Oloroso Sherry casks is very unique. The 3 months of resting have woven a magical flavour and colour throughout turning this into a Reposado Raicilla, and it simply screams 'SIP ME'.
This is equally delicious as it is rare, not to mention amazing value for money.

Our first Raicilla of the month is the famous Tigre de Jalisco. This thing slaps like no other. It is too good to share, too limited to promote, but here we are.

Village: Tienda Nueva, La Manzanilla de la Paz, Sierra del Tigre de Jalisco
Oven: Earthen pit oven (like mezcal)
