STR treatment is specially designed for our American oak wine barrels to make our Kavalan Solist Vinho Barrique, an expression named the “World’s Best Single Malt Whisky” by the 2015 World Whiskies Awards. For this drop we use wine casks from all over the world and to ensure consistency of quality, we deploy STR: shaving, toasting, and recharring on the wine casks. These casks are gently shaved to get rid of some undesirable wine flavours and acid compounds. And then they are toasted and recharred in a way that brings out fruity vanilla notes from the whisky and wood overlaid on a delicate background of complex fruitiness. The process enables the wine barrels to release pleasant flavours such as caramel and chocolate. malt

True to its name, our London Dry is a classic style of gin crafted using traditional botanicals, except for one uniquely Australian ingredient, wild meen.

Meen is a relative of the famed Kangaroo Paw, and is also called blood root on account of the red colours of the bulb.

Complementing the traditional flavours of juniper, coriander, and citrus, meen adds a delicate pepperiness to the palate which sets this gin apart.

London Dry is a light, thirst-quenching beverage made for sipping back on a balmy afternoon.

Quandong, fig, apple, and berries are all stand-out notes in this fun and fruity gin. We’ve also added a backing of citrus and a hint of rose petal for a light, delicate finish.

Pink in hue, this gin is made for occasions that call for an extra splash of fun.

Clean with notes of citrus and delicate vanilla, Rye of the Tiger is a true representation of Australian rye whiskey.

Crafted from 100% Western Australian ingredients, it is masterfully distilled from a mash of 60% Rye and 40% Pale Malt Barley.

Unlike some classic American ryes that typically feature a heavier pickle flavour, this whiskey tastes of gentle spices and light floral notes.

It emits aromas of sweet lemon cream and delicate vanilla, with ample malt and hints of nutmeg and cereal on the palate.

This Rye Of The Tiger has been twice distilled in small batch copper pot stills at our Porongurup Distillery. Each batch is hand bottled and numbered in keeping with our small batch tradition.

The Tropical Single Malt Cocktail

Longing for a holiday in the sunny Caribbean? This cocktail will take your palate on a fruit rollercoaster and leave you on an imaginary beach with the perfect drink in hand.

How to make a Raspberry Shrub?
1 on 1 fruit and sugar maceration left for 2 days, fine sieve, add 1 cup of raspberry vinegar to every 2 cups​ of fruit syrup.

Ingredients
40 ml Arran 10 Years Old
15 ml Triple Sec
15 ml Raspberry Shrub
30 ml Pineapple Juice
30 ml Fresh Lemon Juice
10 ml Peychaud’s Bitters

Method
Build in shaker over crushed ice.
Shake all ingredients.
Strain over fresh glass filled with crushed ice.
Garnish with pineapple wedge and leaf.

From the Giniversity creative laboratory comes this edgy Gin bringing together the best elements from our stable of premium products.

Starting with a used Limeburners whisky barrel, fresh chilli and garlic slowly and naturally ferment, breathing in the fresh and botanically infused Margaret River forest air. Tended to daily until it reaches its prime, it then transforms into our Sriracha Sauce. Our premium Dry Gin, having been barrel aged, melds with the oak, whisky, sriracha and a few secret botanicals, to create this signature Sriracha Gin.

Barrels of Apples Single Malt Cocktail

Did you know that rosemary significantly enhances the quality of memory? We hope this cocktail will take you for a walk on a cool spring day in a blossoming orchard or in a beautiful pine forest.

How to make a Rosemary syrup?
Prepare a simple syrup, equal parts sugar and water. Remove from heat, infuse fresh rosemary for ½ hour, strain & keep cool. Rosemary sprigs can be dried and used as garnish.

Ingredients
40 ml Arran Barrel Reserve
30 ml Calvados
20 ml Rosemary Syrup

Method
Add all ingredients to mixing glass.
Stir all ingredients over ice.
Strain in a prechilled glass.
Garnish with Rosemary sprig.

50ml Arran Whisky Burns Single Malt Whisky
25ml Fresh Lime Juice
15ml Sugar Syrup
6 Mint Leaves
Ginger Beer

Method: shake everything (except ginger beer) over ice and strain into ice filled highball glass. Top up with ginger beer and garnish with a lime wedge and a mint sprig.
