The Brut Réserve is a true expression of the House's style, offering a complex and greedy nose with an unctuous palate. Its generosity, precision, and depth are particularly recognisable, making it a favourite among experts and wine critics worldwide.

Crafted from a blend of 40% Pinot Noir, 40% Chardonnay, and 20% Meunier, this champagne is sourced from sixty different Champagne crus. Three of these crus - Oger, Ambonnay, and Verneuil - are the pillars of the Brut Réserve style. Oger, a Grand Cru Chardonnay from the Côte des Blancs, gives the champagne its fleshy and generous notes. It's not everyday you can say the wine you're about to drink was aged under the sea 🌊 Thalassitis Submerged is just that! This wine was sent 20m down off the east coast of Santorini 🇬🇷 where it was left to age away from light and unaffected by oxygen! Less 500 bottles released per year. This is certainly one not to be missed!

The journey of each cask is an important part of the cask selection process for the team. Whether it's the forest where the oak is sourced or, in the case of second fill barrels, the producer that previously filled it. For this special Project Release, they chose barrels sourced from a family operated winery in the Barossa - Dutschke Wines.⁠

The cask was used to age Dutschke Wines’ 9 year Tawny Fortified Wine and was delivered to us fresh and dripping wet, without re-coopering. The cask was immediately filled with mature Straight Rye Whiskey and allowed to mellow for a further 4 months.⁠

This short resting period in such fresh barrels results in a deliciously well-balanced whiskey that envelopes the spice of The Gospel Straight Rye with the rich sweetness of the Tawny. Huge biscuity flavours, soft vanilla, stewed fruits and rich baking spices. Limited release so get in quick. There are only a few bottles available. 🥃
