MB CABERNET MERLOT

Cabernet Sauvignon is a wine that cries out for food. Thanks to its acidity, tannins, and alcohol. If there ever was a variety made better by a feast, it’s Cabernet. The fruit is treated very delicately to preserve the pristine citrus and floral aromas and flavors. Harvested in the cool of the night at optimum flavor levels. The juice is taken from the initial crushing of the grapes before any pressing of the skins occurs and blended with a small amount of pressings to add texture and character to this sweet wine. What does Shiraz taste like?

The wines are opaque, ruby-purple in hue, and offer concentrated jammy aromas and flavors of blueberry and blackberry, along with big ripe tannins.

Smoked meat notes like beef jerky and bacon along with black pepper spice, are also characteristics.

Alcohol levels tend to be higher (14-15.5%). as are f=degrees of oak use and oak aging.

The MB Cabernet Sauvignon continues to show its unique qualities. Made from grapes grown in close proximity to the Mayacamas Mountains, the wine brims with bold aromas of a defining hint of mint. It is also known for a green capsicum note attributed to an organic compound group called pyrazines. Medium- to full-bodied, this wine glides over the palate with fine, grippy tannins and gorgeous bright-yet-balanced fruit.

After a wet and cool winter, both bud break and flowering got off to a later-than-normal start. Summer brought nice, even temperatures with very few heat spikes, resulting in great phenolic development in the grapes and even ripening across all our vineyard sites. Due to the lower-than-normal summer temperatures, the grapes enjoyed long, steady ripening. The MB Cabernet Sauvignon has produced wines that will provide exceptional pleasure upon release and age gracefully in your cellar.

Amalfi pinot grigio Often better known forStainless steel and cold fermentation had started to catch on with modern winemakers, Northern Italy has a number of delicious and drinkable white wines. To know Northern Italian wines is to know the influences of the wines of the countries that border Italy.

Old World wines tend to be far less about fruit-forward flavors, and more about the effect that the climate, soil, and adjacently growing flora (terroir) have on the grapes during their growth.

The most widely recognizable varietal is Pinot Grigio which is very rustic, medium-bodied, with medium to high acidity. Chardonnay seems to grow anywhere grapes can grow; although Italian varieties are not normally coveted quality.

This wine is the essence of what the Great Southern has to offer for Riesling. Sourced from three individual sub-regions of the Great Southern where each plays a role in bringing different characters to the overall wine.

The lifted aromatic White Grapes (Germany) are perfectly balanced with high acidity and textural mid-palate weight (Frankland River) & fresh lime, pear and green apple (Denmark). Typical of Great Southern Rieslings, the wine is very attractive in its youth but the biggest smiles will be with those who have the patience to cellar for 10-15 years.

Grapes were both machine harvested and handpicked at early hours to preserve fruit intensity and minimal delay in processing time. Then destemmed directly to press for a gentle extraction of free-run juice only, the brilliantly clear juice was cool-fermented in stainless to retain freshness, fruit purity and acidity. Minimal fining prior to bottling.

Part of the success of using cork to seal to wine bottles comes from tradition. Cork or other sealants in some form have been used to seal vessels holding wine for thousands of years.

Corks seal the wine in the bottle which severely retards the oxidation process, allowing the wine to age and evolve slowly over time.

Sure both of these wines are great with food, especially meat, but each has its own set of characteristics, and it’s these differences that actually make the wines perfect for blending together, as is done when making Bordeaux, because when combined their individual traits support one another in a really delicious way.

Both Merlot and Cabernet were born in Bordeaux, France and they quickly came to dominate the famous wine region, though depending on what side of the Gironde river you live on, you’re more likely to grow more Cabernet or more Merlot.
