11 Years Old for this single Grain Irish Whiskey aged in Ireland and bottled in our cellars in France. Cooley Single Grain is only distilled twice compared to the classic 3 times distillation that is characteristic of Irish whiskeys. It gives it stronger flavours (Rich, soft oils, melt-in-the-mouth grain and just a hint of barley for good measure) amplified by the Ratafia Champenois touch… « The Dumangin Champagne Twist ».

We still see a stylistic difference between the juice of the original blocks of fruit we planted in 1975 and the block planted in 2000. Tfore we will continue to make the young vines riesling, now identifiable to so many of our clients.
Delicious orange citrus notes and a stone-like mineral element are a terrific introduction. These qualities proceed to the palate, together with bright, red apple and a powdery talc note. The palate is crisp and clean, while maintaining the rounded quality of white stone fruit, coupled with chalky texture and a clean, bright line of acidity. A mouth-watering, lingering finish completes the drinkability factor.

Smelling like a barrel-aged grappa, this novel spirit blends Alsatian beer eau-de-vie with Alsatian malt whisky. It's oaky then fruity with spiced plum, mixed fruit muesli and raisins on the nose and early into the delivery. The middle stage is medium bodied with a creamy, appetising vibrancy, finishing more like a typical single malt, while the raisiny / grappa character returns through the aftertaste. Very European. 44.4% Alc./Vol. 393 bottles

Lake Breeze Reserve Chardonnay 2019

The surprisingly cool, maritime conditions at Langhorne Creek allow for a slow even ripening w fresh natural acidity and ?varietal fruit characters are retained.
The grapes for the 2019 Reserve Chardonnay were picked from the most outstanding block of chardonnay on the property and gently pressed prior to barrel fermentation and maturation in French oak.
Elements of wild yeast fermentation, extended time on yeast lees and partial malo-lactic fermentation have added complexity and enhanced the natural citrus and nectarine flavours in the wine.
An elegant wine with a long and textured finish, which has the capacity to age gracefully in the bottle over the next 6 to 8 years.

Grosperrin 1992 Bons Bois Cognac 51.5% 350ml

This vintage Cognac comes from a fruit farm located in Saintonge. Having started in 1971 with 10 hectares of apple trees, this farm now has some 100 hectares of fruit trees and only a few hectares of vines. This rustic terroir, made up of clays and marls, is reputed not to be suitable for viticulture. However, good management of the vines, careful distillation and quality aging manage to give these Cognacs a distinctive, powerful and balanced character, more and more sought after by amateurs.
Tasting Notes: Golden colour. On the nose, sweet aromas of rum baba, currants and orange peels. You have to let the glass air out to perceive more airy and vegetal notes, such as grapes and cloves. Beautiful puffs of salty air that make you salivate. In the mouth, a power contained in the attack. Thanks to a very slow reduction, the mouth became oily, the reduction does not feel.

Taste
Elegant, textural and a bit wild. Focused fruit is bound by texture and stimulates the palate. Aromas of jasmine jump out of the glass, followed by fresh nectarine, peach and pink grapefruit. A tight and focused palate of citrus and grapefruit and hints of nectarine driving the wine through the palate. Keeps you wanting more. Sexy.

The whisky has spent 3 years in a Bourbon cask. Polished brass. Thick, oily peat at first before a dryish / mildly fruity nose which is also slightly grassy. Sweeter in later inhalations revealing sponge cake, wax, oil (linseed?) followed by hints of dried apple, straw bale and vanilla after five minutes aeration. An odd yet appealing combination. Gentle yet fresh delivery with crisp / grassy malt and subtle herbal-tea like flavours. An unusual arrangement. Keeps you guessing. 46% Alc./Vol.

A blend from Chugoku Jozo, who mature their whiskies in a tunnel rather than a warehouse. The temperature of the tunnel is always 15 degrees while the temperature of the cellar at the headquarters in Hatsukaichi city is a little higher than that. This is the company's malt and grain, no age statement blend that includes a sublte peated component.

Different from the previous batch at the start (notes of brazil nuts) but with a kick on the fruits (cherries, cranberries). After aeration, we find a little the character of the previous one with other notes of rancio. Cocoa powder on the finish, or rather uncoached chocolate. J.M Rhum Agricole Blanc (White) 50% 700ml

Martinique is a French island with the largest number of distilleries in the Eastern Caribbean. Both pot and column stills are used. As on other French islands such as Guadeloupe, both rhum agricole (made from sugar cane juice) and rhum industriel (made from molasses) are produced. These Rums are frequently aged in used French brandy casks for a minimum of three years with 'Rhum vieux' (aged Rum) frequently compared to high-quality French brandies.
J.M rum is distilled on Martinique's smallest estate, located in the northeast in Macouba, w the sugar cane grows on 28-degree vertical slopes in rich volcanic soil at the foot of Mount Pelée. Due to its unique location with sea breezes, rainforest, an intense microclimate, and high cloud cover, Rhum J.M. cuts their sugar later than other distilleries (most cut the cane at the end of February or early March, was Rhum J.M. does not cut theirs until late March or early April). This practice, combined with the region's peculiar environment are said to be contributing factors to the unique flavour to this unusual rum.

Distilled the 5th October 1990.
The rare single malt was distilled in Scotland in December 1990 and was then transported to France w it matured for more than 30 years. Over a quarter of a decade! The ageing took place in a single Oloroso sherry cask in a Burgundian cave - now that's not something you see every day.
Exceptional maturation, concentrated and elegant floral savours, subtle, without any alcohol feelings. Round and delicate, reddish amber colour. The silky texture makes a beautiful balance. To be relished in the silence

Most rum is made from molasses. In the French West Indies, rum is made by fermenting, then distilling pure sugar cane juice. This Rum is a result of blends from Jamaica, Trinidad Barbados, Guyana, Guadeloupe and Martinique. What makes it unique is that its made from 100% sugar cane juice, a rarity for non French rums, then matured in oak cask for 2 years. Fruit and vanilla aromas, fresh fruity notes and a touch of ripe banana on the finish. A true Caribbean Blend, made in the French manner.
