Hi all - important information for any Japanese whisky lovers visiting the Suntory distilleries in Japan: take note that the tasting rooms, in addition to the tours, now require booking. Yamazaki also undergoing landscaping and renovations currently, in addition the the published Hakushu distillery closure for renovations.

North Star Chaos is an amazing blend of fruity and smoky whiskies, with some aged in sherry. The peppery, salty and citrus driven flavours with this are certainly well balanced and something I think would appeal to many. All batches have been great, so any you can get your hands on, I'm sure won't disappoint.

The different wine and wood influence of the Longrow Red series are one of the best ways I find to experience the variety of things that can be done with peated malt whiskies.
They have complex flavours I don't find in sherried Bowmore or Laphroaig and are towards more char and salt than the medicinal notes in some of those.
Definitely something to try if you have the chance and the many variations of it give you plenty of options.

I always enjoy revisiting peated whiskies and exploring a few back-to-back. After you have your first sip and become more accustomed to the peat, you are able to start exploring all the fruity, floral flavours.
This is particularly noticeable with cask strength releases, including this beauty from Lagavulin, as you can add water, just let it sit and open up in the glass, or even use it in cocktails without losing the flavour of the whisky (if that's your thing).

Dewar's Double Double is an amazing blended scotch whisky. It's complex, not overly oaky, with sweetness, mouthfeel and oak notes comparable to 25yo+ whiskies I've tried.
Highly recommend trying this one. Just wish the bottle was double the size!

Bushmills 10 is an amazing lightly flavoured whisky. The taste of green apple remind me a lot of Green Spot and its certainly an easy drinker.
Here it sits amongst some home-grown hops, moments before being uncorked.

Starward Two-Fold is one of the most affordable and easy to drink whiskies on the market.
It's an Australian gem, made by combining wheat-based spirit from Manildra in NSW, distilled to Starward's specifications to retain the flavour of the grain (rather than the neutral spirit Manildra supplies many other Australian distilleries as a base for their gin and other spirits). It's combined with Starward's own malt whisky distilled in their Port Melbourne facility. With use of Australian wine barrels for aging, it's packed with flavour and drinks well neat, on ice, as a base for your favourite cocktails and everything in between.
Definitely give it a try if you have the chance!

Nikka Taketsuru non-age statement whisky is still one of my favourite Japanese whiskies. The hint of toasted coconut I find in this is something remincent of some other lightly peated whiskies like Springbank. Great stuff and can still be found on shelves in Melbourne for a reasonable price unlike many others.

Thanks for the kind words and support from those who made the time this year. It was a tough year to launch a new business, but I appreciate that many have invested their hard-earned cash to support a small business and allowed me to share my collection with more people.
Bruichladdich's Octomore range is a long-time favourite of mine. The 6th editions still hold their place at the top for me, but I've made time to revisit the entire range during the year.
I certainly hope in the new year we continue to see the trend of distilleries releasing whisky above the minimum required 40%. This makes it far easier to explore the whisky in the glass at a range of ABVs, adding drops of water to see it change, open up and perhaps muting some flavours/spice to explore other notes.
I think this Octomore is nice with only a few drops of water. That way it keeps the oily mouth feel, wakens some of the peat and opens some caramelised BBQ flavours.

GlenAllachie produce some excellent, affordable single malt scotch. The 12yo can currently be had for around $110 AUD and has some masterfully balanced sherry oak flavours. Their cask strength 10yo, 18yo and special releases have all also been excellent. Definitely give them a try if you haven't already!

Laphroaig 18 was an amazing whisky. It's sweet, smokey, spicey and well rounded, however it's since been discontinued. I'm looking forward to getting my hands on the more recently released 15yo Laphroaig to compare. Until then, I'll try to savour this bottle.

Kentucky Owl is some great whiskey with a classic bourbon flavour profile. It can often be priced quite a bit higher than you'd expect for something that tastes fairly young and not entirely rounded off by the cask, but the spirit doesn't disappoint by any means.
One to keep an eye out for if it comes up on sale, as some places are now struggling to move it at the originally marked exorbitant prices. Alternatively, you can grab a sample from the store to see what you think!

Springbank produce some pretty amazing whisky and this 21yo scotch is definitely something special. Rich and syrupy; with flavours of caramel, almonds and tropical fruit. Some Longrow Red is sitting next to me needing to be opened soon too!

In the world of whisky, some spirits are presented in bottles which are as much a piece of art as the carefully crafted liquid they contain.
Hibiki 21 Kacho Fugetsu is one such whisky from Japan. It's won many awards for the amazingly balanced spirit and the Japanese landscape around Mt Fuji adorns the bottle, shimmering with gold leaf and the 24-facet bottle catching the light beautifully.

Finally got my hands on some Archie Rose whiskies. Their single malt really packs a flavour punch, with loads of fruity sultana from ex-apera (Aussie sherry) casks, gentle peat and caramel. Definitely one of the most impressive Australian whiskies I've had in a while, particularly at the price point. Samples and a few bottles will be up on the site shortly.

For those familiar with Green Spot, this Red Spot whiskey is the oldest offering from Mitchell and Son. The spirit is aged in a mixture of Bourbon, Spanish sherry and Sicilian Marsala wine casks. The result is a much more intense and fruity whisky, compared to the green apple and buttery notes found in Green Spot. Definitely one to try if you love Irish Whiskey.

Macallan produce some incredible whiskies. They've become incredibly expensive and difficult to find in Australia in recent years.
Macallan reached their level of popularity not only because of a great marketing team and product placement, but also because of the amazing quality of the liquid in the bottle.

Elijah Craig is richly sweet an full of caramel. Heaven Hill have since dropped the age statement from this whisky, but all of their whiskies are excellent.
I personally would pick the 12yo age stated version, or their barrel proof, over the version currently available on most Aussie retailer's shelves. For this reason, I've hunted down a few of each of these and brought them to Australia to share some of what they used to offer and some of what our US friends get on the shelves.
These will be available as both samples and a few full bottles. I hope you enjoy them as much as I do.

This young Ardbeg Wee Beastie surprised me a bit when I first tried it. I've tried quite a number of younger whiskies recently, whether they be Octomore, Waterford or some of the many young whiskies coming out of Australia at the moment. There's something special about the intensity of the peat in younger pleated whiskies. While they do get richer and more complex with age, the peat begins to become dull over time in the barrel.
This whisky is bright, salty and sweet, like something you'd imagine just washed up on the beach. It has briney notes that go well with the slightly sherried flavours. While it certainly has less caramel flavours than Ardbegs standard 10yo release, this really does stand on its own as a unique and interesting whisky.
This and a number of other Ardbeg whiskies are now available as samples on the website. After trying, I have even stocked a few full-size bottles of this one, as I'm sure many of you will enjoy this one too.

Waterford Irish Whiskey is now on my shelves and available for samples or full bottle purchase in Australia.
They're certainly quite unique in Ireland with their terroir based approach to the farming of their barley, something that I've otherwise only heard from Bruichladdich. The bottles look amazing and the whisky is excellent.
With a couple drops of it certainly opens up, although even at the bottled 50% ABV, these are silky whiskies. They allow you to taste both the base spirit and the mix of casks used quite distinctly. At first, being able to taste some flavours I recognise to be from "new make" unaged spirit was a little unusual, but further sips allowed me to find some complexity in this young spirit which I have since gone back to revisit as I found it quite unique and interesting to explore.

This is definitely one of my all time favourite whiskies and you can certainly tell the whisky in the bottle is far older than 18yo. It's unfortunately becoming harder and harder to source and I suspect it may be difficult to find anywhere soon, similar to the 15yo Revival previously.

I think Bunnahabhain whisky is amazing and it's always one I recommend to people looking to explore whisky, even if they're fairly new. It's generally lesser known, reasonably priced (for the 12yo), lightly sherried and salty Islay whisky, without the peat the Isle is most known for.
This 25yo Bunnah' takes those flavours up several notches. I always explored whiskies by first trying the younger offerings of a distillery before investing in full bottles of their more expensive releases. I'd highly recommend this approach, as it gives you a cheaper way to compare and learn what you like. It's my hope that the samples I'm offering will also help make this process easier and cheaper too.
I think this works particularly well with scotch, as Scottish distilleries usually have a vertical line-up of products that incrementally changes the flavour profile and complexity of their spirit. Just be conscious of the fact that some distilleries also introduce other casks for finishing, use different oak for some of their line-up or may have variance in bottling ABV also.
