From pale gold, to bright amber through to a dark umber - beers come in many different shades, but what causes this to occur?
There are two main chemical reactions in the beer making process that influence colour - one that attaches amino acids to sugars and another that makes the sugar break down. These all occur on processes that affect the malt, and depending on the time taken will result in different colourations.
