Rabbit Tale “Cavehill” Kentucky straight bourbon whiskey dashes in on soft yet quick feet, taking your taste buds down a rabbit hole of wonderment and supremely balanced sweetness. This deeply hued bourbon is one of Rabbit Hole’s flagship offerings labelled as a four-grain bourbon recipe containing a mash bill of 70% corn, 10% wheat, 10% honey malted barley, and 10% malted barley. Aged for a minimum of 3 years in new American oak barrels, Cavehill has a matured barrel strength of 95% proof and offers aromatic notes of soft pears dipped in honey, ginger cookies, molasses, and citrus zest. The palate is layered in warm hints of citrus, melted toffee, and vanilla bean frosted in cream.

Wild Turkey Diamond Anniversary

Released in 2014, this was a special bottling of Wild Turkey created with the help of master distiller, Eddie Russell, to celebrate the 60 years his father Jimmy has spent in the same job. Made with bourbons aged for between 13 and 16 years.

The Wild Turkey distillery, then known as Boulevard, was built in 1935 by the Ripy Brothers in Lawrenceburg, Kentucky. The Wild Turkey brand name originated around 1941 when some, shared on a hunting trip, was referred to as \”some of that wild turkey whiskey.\” It is distilled at bottled by the Austin Nicholls company and for many years they had sourced the whiskey from the Ripy’s, but eventually bought the distillery from them in 1972, renaming it in the process. Of almost equal importance, the purchase of the distillery included the contract of legendary master distillery, Jimmy Russell, who started working there in 1954. His name is synonymous with the brand, and his son succeeded him 2015. In 2011 a new Wild Turkey distillery was built on the same site, replacing the original Ripy plant after 76 years.

Wild Turkey 15 Year Old American Spirit / Master Distiller Selection

Bushmills 16 Year Old “Three Woods”

The Old Bushmills distillery in Northern Ireland is the world’s oldest licensed whiskey producer, granted a license to distil whisky in 1608. The modern iteration of the distillery was built in 1885, following a fire. Old Bushmills was bought by the Irish Distillers group in 1971, giving them a full monopoly on the production of whiskey on the island, lasting until 1987 when Cooley was opened by the Teeling family. Diageo later bought the site in 2005, before trading it 9 years later with Casa Cuervo in exchange for a stake in one of their Tequila brands.

A bottle of Bushmills 16 year old matured in a combination of ‘Three Woods’: American oak, Oloroso sherry oak and also Port pipes.
