I created Cepas Elegidas out of a desire to produce limited-lot wines designed for the willing, not for the weak of heart. Each vintage brings new life into the vines and with special characteristics to that growing season. I am motivated by excellence and change, knowing that year after year each vineyard adopts to each particular season. For this reason I believe that one cannot achieve a valid
and complete expression from each vineyard making wines by recipe. Each harvest I select only the best vineyards from which I source fruit from. No lengthy contracts oblige me to keep working with fruit that may have had a bad year that will later produce a mediocre wine at best, or that may have been lost to frost or hail. Vineyard selection is extremely important and so is change, because nothing is ever constant. This is why every harvest I make wines from scratch, no recipes or last year's ferment schedules to follow. As there are no repeat vintages, I only make each wine once. To be able to produce fine wines year after year, much of my time is spent walking dozens of vineyards at different sites and tasting the grapes, searching for those unique qualities that can best respect each region and varietal.
